I've been wanting to make more things from Dorie's book Baking From My Home To Yours that I bought recently, without necessarily joining the weekly Tuesday's With Dorie group (I might someday!). So I flipped through the cookie section, as that is about a difficult as I seem to get these days with my baking and I found these blondies. They are REALLY good.
Chewy, Chunky Blondies
Recipe adapted from Dorie Greenspan's Baking From My Home To Yours
2 cups all purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, room temperature
1 1/2 cups light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup butterscotch chips
1/2 cup semi-sweet chocolate chips
3/4 cup milk chocolate chips
1 cup walnuts, toasted and chopped
1/4 cup mini m&m's
1 cup shredded sweetened coconut
Preheat oven to 325 degrees. Line a 9x13 pan with foil and lightly spray with cooking spray. Set aside.
In medium size bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
Beat butter with electric mixer until smooth and creamy. Add both sugars and beat well. Add the eggs and vanilla and beat until well incorporated. With the mixer on low, add the dry ingredients and mix just until incorporated. With a rubber spatula, scrape sides of bowl, then add chips, nuts and coconut and mix until incorporated. Put the mixture in the pan and spread evenly.
Bake for 40 minutes, or until toothpick inserted in center comes out clean. Cool in pan on wire rack about 15 minutes, then remove from pan using foil edges to gently lift from pan. Cool completely on wire rack until room temperature. Cut bars to desired size.
Just before I spread the batter into the pan, I thought I would like to try this dough as cookies. So I popped two cookie on a parchment lined baking sheet and baked them. They were actually REALLY good and I kind of wish I would have just baked the whole batch as cookies, mostly because I probably would have gotten about 4 dozen cookies. They were thin, buttery, crunchy and chewy. Kevin HATES butterscotch, so I rarely use it, but I thought these in bar and cookie form were really good and weren't TOO butterscotchy. There were lots of other things to taste, like the chocolate, walnuts and coconut. I really liked the coconut addition, but you could leave any of the add-ins out if you'd like. I actually did some different add-ins than Dorie's recipe. I'm happy to have this great blondie recipe from Dorie Greenspan!

Oh, I love these!! I tried them about 2 months ago, before joinging TWD. They were such a hit, I made them again about 10 days later. Everyone loved them. Glad you liked them, and great idea to try them as cookies!
Those look wonderful! I love Baking (and it's worth exploring even if you don't join TWD... but I recommend that too!)
You can't go wrong with something that's called chewy, chunky blondies! Cute idea to bake it as cookies, they looked as great as the blondies!
We made these and really liked them as well!
