Gluten Free Banana Cinnamon Chocolate Chip Coffee Cake Recipe, Vegan, too!

Gluten Free Refined Sugar Free Banana Cinnamon Chocolate Chip Coffee Cake (Vegan)

Hello?  Is anyone here?  I’m here!  My last post was exactly one year ago.  What in the world have I been doing?  Just being a busy mom of three teenagers and a ten year old.  That and I just felt like I needed a break.  Not sure why.  I have missed blogging terribly.  I started feeling like a part of who I am was missing.  I love baking and I love sharing it with others.  My health is great!  I cannot complain at all.  With my diet changes of going gluten free and refined sugar free (and my 15 year old deciding to be vegan!), I think I had just been in a rut on what to do, what to make, what to share and post here.  But I decided I really want to try again with this little part of me that was missing.  I’m not in it for hundreds of thousands of visitors.  I’m not going to be making videos.  My blog is WAY outdated.  But I don’t care.  I need to do it for me.  A lot of it is that I’ve just decided I need to keep documenting things I love somewhere else besides just scribbled in a notebook.

notebookrecipe

My idea the last couple months has been to take some of my favorite tried-and-true recipes, whether they be from here on my blog, or favorite blogs or cookbooks and make them gluten free, refined sugar free, and sometimes vegan and share them with you.  I’ve made a number of things already and am so happy with how they are turning out with simple changes like gluten free flours, unrefined sugars (coconut sugar, raw honey, agave, etc.).  I plan to share links to my favorite cookbooks, blogs and recipes as they were originally made, then post my changed results here.  Does that sound good?  I think so.  I’ve asked a few people and they think it’s a great idea.  So I’m here to try it!

Now, this cake—I first shared this cake not long after starting my blog in February 2008!  I saw it on a blog, who adapted it from Bon Appetit in a 2003 magazine article.  I adapted it enough that I’m leaving you the link to my post for this Absolutely Delicious Banana Chocolate Chip Coffee Cake.  I made this more times than I can count over the years.  Well, I’ve come up with a new, delicious favorite that everyone here loves, except it’s gluten free, vegan and refined sugar free.  The boys don’t care!  This is a good sign.  A lot of times, they won’t even try something when I tell them it’s gluten free.  This is gone so quickly every time I’ve made it recently, which is like three or four times.

Gluten Free Refined Sugar Free Banana Cinnamon Chocolate Chip Coffee Cake (vegan) 7-12-17

I made this again yesterday for dinner as we were having the LDS sister missionaries over and one of them has celiacs.  They both went crazy over how good it was and we let them take the leftover cake home.  There wasn’t a lot left, maybe two pieces, but it’s because they had seconds while we were eating it!  Win.  I love when someone is happy with something I’ve made, especially when there are changes that most would think would make something taste strange.  This one is good!  Try it!  It is our go-to when we have overripe bananas.

Gluten Free Refined Sugar Free Banana Cinnamon Chocolate Chip Coffee Cake, vegan

Gluten Free Banana Cinnamon Chocolate Chip Coffee Cake (vegan), by Katrina, Baking and Boys!

*Streusel topping:

1/4 cup coconut sugar**

1/2 tablespoons agave nectar

1/4 cup pecans, chopped

3/4 teaspoon ground cinnamon

1/3 cup Enjoy Life mini chocolate chips

Cake:

1 1/2 cups gluten free flour blend (xanthan gum included)

3/4 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup coconut sugar

1/4 cup agave nectar

1/2 cup (4 ounces) coconut oil

1 flax egg (1 tablespoon ground flaxseed, 2 1/2 tablespoons water, let sit for 5 minutes)

1 1/3 cup mashed banana (about 4 small/medium or 3 large bananas)

3 tablespoons almond milk (or non-dairy milk of your choice)

1/2 teaspoon apple cider vinegar (I use Bragg’s)

1 teaspoon vanilla extract

Make the streusel topping.  Combine the coconut sugar with the agave, mix together with a fork until it is all moist like brown sugar.  Add the pecans, cinnamon and chocolate chips.  Stir together, set aside.

Preheat oven to 350 degrees F.  Line an 8x8 inch square pan (9x9 also works fine!) with nonstick foil and spray lightly with a non-propellant cooking spray (I like coconut oil).  In a small bowl, make the flax egg, let it sit while you prepare the rest.  In another small bowl, combine the almond milk and vinegar, let sit.  In a medium sized bowl, combine the flour, baking powder, baking soda and salt, whisk together and set aside.  In a large bowl, add the coconut sugar, agave and coconut oil.  Whisk until well combined.  Whisk in the flax egg and almond milk mixture and the vanilla.  Stir in mashed banana (sometimes I pulse it in a food processor, sometimes I just mash them with a fork).  Fold in the dry ingredients.  Pour into the prepared pan and spread evenly.  Evenly sprinkle the topping over the cake batter.  Bake for 35 minutes or until a toothpick inserted comes out clean or with just a few crumbs.  Let cool on a wire rack completely.  Remove pan using foil edges.  Carefully remove cake from the foil and put it on a serving plate.

*Note—The original Absolutely Delicious Banana Cake I linked above also has streusel in the middle.  I did make it that way once (photo above), but decided it’s not necessary.  Good, but not necessary.  So if you’d like you can double the topping able and put half of it on half the batter in the pan.  It’s all natural sugars, so no harm done!

**Make your own, all-natural brown sugar.  Combine coconut sugar with agave (use amounts posted above in the streusel for the correct consistency) until moist.  It’s perfect, in my opinion!

Coconut Sugar "Brown Sugar" (add a little agave or honey)

Make your own healthy, all-natural “brown sugar”.  Combine coconut sugar with a touch of agave, raw honey or molasses, mix with a fork until all moist.  Use about 1/2 cup coconut sugar and 1 tablespoon agave/honey/molasses.  I love it!

If I had some more overripe bananas right now, I’d make this again today.  Guess I’ll have to wait another couple days.

You may be wondering what is going on with my family.  Quick update, Scott graduated school last year and is 19, has a girlfriend that he spends all his time with when he’s not working at Taco Bell.

Chocolate Chip Walnut Blondies—Grain Free, Refined Sugar Free

Grain Free Chocolate Chip Walnut Blondies

One of the best goodies I’ve made that I can eat right here and I love the taste and texture.  I have a simple, little secret to tell you—I made the dough of My Favorite Grain Free Chocolate Chip Cookies.  I wanted to add nuts, because for years now, I haven’t been putting nuts in cookies, even though I totally think they should be there, because people around here at my house don’t like them.  Then it dawned on me that I can put all the nuts I want into my own goodies because I am generally the only one around here who will eat them.  So good, healthy, grain free, refined sugar free chocolate chip cookies, with walnuts, needed to happen.  After making the dough, I didn’t feel standing around baking the cookies.

So I hurried and threw the dough into a baking pan and baked them.  Hello?  Easiest thing ever—and these blondies were born.  I know, takes a lot of brain power for that one.  I love the texture and I love having nuts in my own treats.  So win—win.  I wasn’t sure how they’d actually bake, but I decided after 20 minutes to call it good and I let them cool completely.  I thought they’d sink down after taking them out of the oven, but they stayed nice firm.  Not sure I’ll ever make chocolate chip cookies for me again, because this was sure easy and I have 16 blondies to enjoy over the next little while, you know, if I wouldn’t eat three or four of them a day. ; ) No, I think the most I’ve had the first day was three.  They were great stored in an airtight container for a few days.  Now the rest have been in the fridge and are still great.

Chocolate Chip Walnut Blondies, Grain Free, Refined Sugar Free (2)

These have a perfect soft, chewy texture that you want in a blondie and work the same magic that having a cookie would have in the cravings department.

Chocolate Chip Walnut Blondies, Grain Free, Refined Sugar Free, by Katrina Smith, Baking and Boys!

1 cup almond flour

¼ cup coconut flour

1 teaspoon baking soda

¼ teaspoon salt

6 tablespoons coconut oil

½ cup coconut sugar

¼ cup raw honey

6 tablespoons almond butter

1 teaspoon pure vanilla extract

¼ teaspoon pure almond extract (optional)

1 large egg

1 cup Enjoy Life mini chocolate chips, or chocolate of your choice (ingredients in the chocolate—evaporated cane juice, natural chocolate liquor (non-alcoholic), non-dairy cocoa butter—dairy, soy, nut and gluten free)

1/2 cup lightly toasted, chopped walnuts (or nut of your choice)

Preheat oven to 350 degrees F. Line a 9x9 inch baking pan with nonstick foil, lightly oil with coconut oil (probably don’t have to have the foil, but I like using it). In a medium sized bowl, combine the almond flour, coconut flour, baking soda and salt. Set aside. In the bowl of a mixer, combine the coconut oil, coconut sugar, honey and almond butter. Beat until well combined. Add the egg, vanilla and almond extract and beat well. Add the dry ingredients and mix just until combined. Stir in the chocolate chips and walnuts with a spatula. Spread all of the batter  evenly into the baking pan and bake for 20 minutes.  Check the center of the bars with a toothpick that comes out  mostly clean, but a little bit of crumb/chocolate is okay. Let cool on wire rack completely.  Remove the bars from the pan using the foil edges and cut on a cutting board into 16 squares.   Store the ones not eaten immediately in an airtight container.

Deliciousness!  Can’t wait to try them with pecans.  Also going to try them with peanut butter instead of almond butter and put some peanuts in them.  Oh the endless possibilities!

Eight Years of Blogging! Chocolate Drizzled Toasted Almond Coconut Macaroons

Chocolate Drizzled Toasted Almond Coconut Macaroons, Gluten Free, Paleo

Today it has been eight years since I started my blog!  I cannot believe it—eight years!  When I started it, just to keep track of and share happenings of my boys and my life with my family and friends, I had no idea I’d still be at it this many years later.  My boys are sure growing up!

Smith Boys

It’s strange to think back to 2008.  Sam wasn’t even one when I started my blog.  He’s now almost nine!  Scott is 17, Parker is 14, and Taylor is 12!  Bah!!!  It’s too much to keep thinking about, so let’s talk macaroons instead.

I love coconut.  I don’t think I’ve ever met or made a macaroon I didn’t like.  But I think I’ve made one that might be my favorite now….and for always?  These have toasted almonds, ground nice and finely.  They are made with coconut sugar and raw honey, unsweetened coconut and egg whites.  Perfectly gluten free and refined sugar free, but you must believe me—they are so good.  Perfect, if I must say so.  Yes, they are great plain, as is.  But if you know me, I have to add a little chocolate to just about everything.  So I melted some Enjoy Life chocolate chips and drizzled it over the tops of the cookies, then sprinkled some more of the freshly ground toasted almonds on top.  Heavenly!

Coconut Macaroons

They really are great without the chocolate.  I know, I ate a few of them before the chocolate came along.  But come on—everything is better with chocolate.  It had to be done.  I just wouldn’t be me if I hadn’t.  You want the recipe, I know, that’s really why you’re here.

Chocolate Drizzled Toasted Almond Coconut Macaroons

Can you guess which one I ate first?  That’s right—the one where the bigger drizzle of chocolate fell upon it. ; )

Chocolate Drizzled Toasted Almond Coconut Macaroons, by Katrina, Baking and Boys! (Gluten Free, Grain Free, Paleo, Refined Sugar Free)

2 large egg whites, room temperature

1/4 cup coconut sugar

1/4 cup raw honey

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1/8 teaspoon salt

3 cups unsweetened (dessicated) shredded coconut

1/2 cup freshly toasted, then finely ground almonds*

3-4 ounces Enjoy Life chocolate chips (3 ounces is 1/2 cup)

1/2 teaspoon coconut oil

Preheat oven to 350 degrees F.  Line baking sheets with parchment paper.  In the bowl of a stand mixer, add the egg whites and begin beating them on high speed with the wire attachment until foamy.  Gradually add the coconut sugar then the honey. Scrape the sides of the bowl.  Add the vanilla, almond extract and salt and beat until soft peaks form.  Fold the coconut and ground almonds into the egg white mixture.  Using a cookie scoop, put the coconut mixture into mounds on the baking sheet, using your hands/fingers form each firmly together on the tops.  They can be fairly close together on the baking sheet as they do not spread.  Makes about 16 cookies.  Bake for 15 minutes.  Let cool on the baking sheet until almost cool.  Remove to a wire rack to cool completely.  Melt the chocolate in a glass dish in the microwave in 20-30 second intervals, stirring in between.  When it is almost completely melted, add the coconut oil and stir until melted and combined.  This only takes about 90 seconds total.  Using a small spoon (or add the chocolate to a sandwich-sized plastic zip top baggie with the corner snipped off), drizzle the chocolate over each cookie.  I happened to have some extra ground almonds and sprinkled it over each cookie.

Drizzled Chocolate Toasted Almond Coconut Macaroons

I took the inspiration and basic recipe for these from a recipe for some macaroons I made a couple years ago that were also the bomb--White Chocolate Lime Coconut Macaroons and Dark Chocolate Hazelnut Coconut Macaroons.  These were also delicious!  Try them!  Credit goes again to What Jew Wanna Eat for the original recipe.

Happy Eight Years of Blogging to me.  Who knows—maybe another eight year or more?  I don’t even want to think about how grown up my boys would be then—and how old that would make me…..

Spicy Mixed Nuts (Refined Sugar Free, Paleo)

Paleo Spiced Mixed Nuts

Looking for a munchy snack for New Year’s Eve?  These spiced mixed nuts are great!  They aren’t just perfect for New Year’s or any other holiday, I’d make them year round.  And they are pretty healthy—there are no refined sugars in them—just good Grade B maple syrup, and not even that much.  A little egg white to add to the protein and some great spices make these perfectly crunchy and delicious.  I’ve loved having them here while others around me are eating so many other treats that I no longer eat.

I used pecans, almonds, and just a handful of cashews and hazelnuts along with some raw sunflower seeds.  I threw a little orange zest in the mixture and it’s good.  I wish I would have added a little more.  The kick from some cayenne is just enough, but if you’d like it even spicier, add a little more.  I was afraid and didn’t want to make them too spicy since I’m mainly the only one eating them around here.  Love the sweet combo of cinnamon, maple and orange.  It goes well with the cayenne, chili and cumin powder to make a great sweet and spicy flavor.

These made for some nice holidays gifts I also handed out.

Spiced Mixed Nuts

Spicy Mixed Nuts (Paleo, Refined Sugar Free), by Katrina, Baking and Boys!

5 cups mixed nuts (I used a mixture of mostly pecans and almonds, with some cashews, hazelnuts and some sunflower seeds)

2 large egg whites

¼ cup Grade B maple syrup

½ teaspoon ground cinnamon

½ teaspoon cumin

1/4 teaspoon Ancho chili powder

¼ teaspoon cayenne powder

1 teaspoon grated orange zest

Preheat oven to 275 degrees F. Line a rimmed baking sheet with a Silpat or parchment paper. Put all the nuts in a large bowl. Whip the egg whites in a stand mixer or with a hand mixer for 2 minutes, until frothy. Add the rest of the ingredients (except the nuts) and fold it all together. Spread the mixture evenly on the baking sheet and bake for 45 minutes, stirring every 15 minutes. Remove from oven and let cool completely. Store in an airtight container. Or portion them out into cute gift bags and ties.

Apple Cinnamon Granola, Gluten Free, Refined Sugar Free, Vegan

Apple Cinnamon Granola (Gluten Free) 10-20-15
I love granola.  I’m so happy that granola can easily be made gluten free—and refined sugar free.  It makes for a great snack.  Even when you just need to grab a handful and go.  But it also makes for a great breakfast.  I love it in a bowl with almond milk and some more fruit as well as with a little Greek yogurt, more fresh fruit and a drizzle of raw honey.  I almost always have some made and ready to eat at any time.  As I type this, I’m almost out of this yummy Apple Cinnamon Granola and need to make more.  Some Gluten Free Oats were on sale recently, so I have plenty in stock.  I love making all kinds and flavors of granola.  What is your favorite?
Apple Cinnamon Granola, Gluten Free, Refined Sugar Free, by Katrina, Baking and Boys!
4 cups gluten free old fashioned oats***
1/4 cup ground flax meal
1/2 cup raw sunflower seeds
1 cup chopped pecans
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup coconut oil
1/4 cup coconut sugar
1/3 cup unsweetened, natural applesauce
1 teaspoon pure vanilla extract
1 cup dried apple pieces, tossed in a little cinnamon (optional)
Preheat oven to 300 degrees F.  In a large bowl, combine the oats, flax meal, sunflower seeds, pecans, salt and cinnamon.  Stir together.  In a medium sized microwaveable bowl, combine the coconut oil and coconut sugar.  Microwave for 30 seconds.  Whisk to combine.  Add the applesauce and vanilla and whisk together.  Stir the wet ingredients into the big bowl of dry ingredients and stir until all is moistened.  Pour the mixture out onto a parchment or Silpat lined baking sheet.  Spread evenly.  Bake for 22-25 minutes, until golden brown.  Let granola sit untouched on baking sheet on wire rack until cooled, this helps the pieces stick together in bigger clumps if you like it chunky.  Stirring right after if comes out of the oven makes for separated pieces (which is still good!).  Once pieces are broken up spread the dried apple pieces around and toss evenly.  Store in an airtight container.  ***Don’t want to or need to worry about gluten free, just use regular oats, this works both ways!
Cinnamon Apple Granola (Gluten Free)
Hmm, what kind should I make next?  Any ideas on flavors yet unseen?  I need more granola and I need it right now.

Chocolate Zucchini Snack Cake—Gluten Free, Refined Sugar Free

Chocolate Zucchini Snack Cake

I have some zucchini (who doesn’t?!).  I decided to make something, and after making my “famous” Grandma Tiny's Zucchini Cookies so I could give them to some friends, I felt that I needed to make something I could eat, too.  Taking notes from the recipe for Gluten Free Chocolate Zucchini Brownies I made two years ago, I changed up a few things figuring these would be a little less brownie-like and have more of a cakey texture—and they do.  They are good.  I challenge anyone to test them out and see if they’d have a clue these are gluten free, have no refined sugar and are made with coconut oil instead of butter.  I even think they wouldn’t know they have zucchini, too.  I’m happy with my new snack!

Part of the reason you can’t even tell they have zucchini is because when I make baked goods with zucchini, I prefer to use the finer side of the grater.

grated zucchini

See the difference?  If you set the grated zucchini on paper towel while getting the rest of the ingredients ready, a lot of the liquid is drained from the shreds which helps you not end up with a wet mess when you’re baking with them.  When I made the cookies earlier, I forgot to use the smaller grate, so I put the zucchini (along with the brown sugar and oil I’d already mixed in with it) in the food processor and chopped it a little finer by just pulsing it a few times.  I think it worked perfectly!

Grandma Tiny's Zucchini Cookies

I think it’s okay and necessary for the zucchini to be visible in zucchini cookies, same with zucchini bread, but for some reason not in chocolate things like brownies and cake.  Just don’t tell people who don’t want a vegetable in their baked goods and they wouldn’t even know.  ; )

Chocolate Zucchini Snack Cake—Gluten Free, Refined Sugar Free, by Katrina, Baking and Boys!

1/2 cup coconut sugar

1/2 cup raw honey

1/4 cup organic coconut oil

1/2 cup raw cacao (or cocoa powder)

2 large eggs

1 teaspoon vanilla extract

1 cup almond flour

3/4 cup gluten free flour blend (with xanthan gum)

1/2 teaspoon baking powder

3/4 teaspoon fine sea salt

1 cup finely shredded, drained on paper towel for 20 minutes, packed zucchini

1/2 cup Enjoy Life mini chocolate chips (or chips of your choice)

1/2 cup pecans, roughly chopped, lightly toasted

Preheat oven to 350 degrees F.  Line a 9x9 inch baking pan with nonstick foil with edges creased down over the sides and grease lightly with coconut oil.  Set aside.  In a large bowl, whisk together the coconut sugar, honey, and coconut oil.  Add the cocoa powder and stir together until well combined.  Whisk in the eggs and vanilla.  Add the almond flour, gluten free flour blend, baking powder and salt.  Stir with a spatula until just combined.  Stir in the zucchini.  Stir in the chocolate chips and pecans.  Spread the batter evenly in the prepared pan.  Bake for 23-25 minutes, until a toothpick inserted in the center comes out with just moist crumbs.  Let sit on wire rack until cool.  Remove from pan using the foil edges.  Set on a cutting board and cut into desired sized pieces.  Snack away.

Chocolate Zucchini Snack Cake

Mmmm!  Do you see the zucchini in there?  No.  You can’t tell it’s there, but veggies in cake equals healthy! ; )

Grain Free Blueberry Muffins (Gluten Free and Refined Sugar Free, too)

Grain Free Blueberry Muffin

Sometimes I miss a good muffin.  You try to make a perfect one gluten and refined sugar free.  I realized I had some organic blueberries and that muffins should and could be made.  I checked out a number of different recipes online and went with a grain free one made with almond flour.  I am super happy with how these turned out.

My favorite part (besides the blueberries) is the coconut almond topping.  These were so easy to make.

Grain Free Blueberry Muffins 2 Grain Free Blueberry Muffins (Refined Sugar Free), by Katrina, Baking and Boys!

1/4 cup (56 grams) coconut oil (the oil I used was already melted, it’s summertime)

1/4 cup (84 grams) raw honey

1 teaspoon vanilla extract

1 teaspoon almond extract

3 tablespoons full fat coconut milk

2 large farm fresh eggs, room temperature

2 cups (224 grams) almond flour

1 teaspoon baking powder

1/8 teaspoon salt

1 cup fresh blueberries, washed and set out in an even layer to dry

2 tablespoons chopped almonds (or pre-sliced)

2 tablespoons unsweetened flaked coconut

*Optional, 1 teaspoon lemon zest would be great added to the batter

Preheat oven to 350 degrees F.  Grease a muffin tin (only 9) with coconut oil, just put a couple drops of coconut oil in each one and rub it around evenly with your fingers.  Set aside.  In a medium sized bowl, add the coconut oil, raw honey, almond extract, vanilla extract and coconut milk.  Whisk together until well combined.  Whisk in the eggs.  Add the almond flour, baking powder and salt and stir with a wooden spoon just until combined.  Fold in the blueberries.  Fill each of the 9 muffins cups using a medium sized cookie scoop if you have one.  Combine the almonds and coconut together and sprinkle some on the top of each muffin.  Bake for 14-16 minutes.  Let sit for a few minutes in the tin, then carefully remove each just using your fingers.  None of them broke when I removed them from the pan.  If you tip them upside down out of the tin, you’ll lose a lot of the topping.  Let cool on a wire rack until you can’t stand it any longer and have to eat one…..or two.

Grain Free Blueberry Muffins

These have a perfect slightly crisp outside and are tender and muffin-y on the inside.

Grain Free Blueberry Muffins 3

The raw almonds and coconut toast perfectly on top of the muffins.  Sliced almonds would be great, but I didn’t have any.  Chopping whole almonds worked just fine!

Coconut Almond Raw Brownies

Coconut Almond Raw Chewy Fudge

I need a treat—stat!  I made lots of goodies for our recent family reunion, cookies and cakes galore.  None of which I took a single bite of.  Go me, whatever.  I’m kind of over the whole thing of wishing I could eat certain things and for the most part seeing them and baking them doesn’t even  tempt me.  BUT, I do still need my own sweet treats now and then and these are perfect…and healthy!

I’ve posted similar things like these before, but looking back I didn’t see this exact thing with coconut and almonds (and chocolate!) being the star.  I did keep thinking of these Healthy Almond Joy or Mounds Coconut Candy that are dunked in a healthy melted chocolate, I suppose these are similar, but easier and a bit healthier since they aren’t dunked in more chocolate.  Never fear, there is a little Enjoy Life chocolate chips added.  You can make all kinds of flavors using different nuts and mix-ins.  I suppose they are similar to Lara Bars and other protein/energy bars, but I’ve tried some of those and I definitely think the homemade kind taste much better!

Coconut Almond Raw Brownies, by Katrina, Baking and Boys!

1 cup pitted dates, soaked in hot water about 10-15 minutes

¾ cup raw cashews

¼ cup raw cacao (or cocoa powder)

3 T. raw honey

¼ teaspoon almond extract

1/3 cup unsweetened shredded coconut

1/3 cup toasted almonds

2 T. Enjoy Life mini chocolate chips

After soaking the dates, drain the water and chop the dates on a cutting board.  This is to make sure there are no pits, sometimes they are still there ready to tear up your food processor. ; )  Put the chopped dates and cashews in a food processor and pulse until they are starting to be pretty finely ground.  Add the cacao and honey and continue letting the food processor blend them until they start forming a thick paste that clumps together.  Add the almond extract and pulse a few times.  Add the shredded coconut and toasted almonds and pulse until well combined.  The mixture may need to be scraped from the sides of the bowl and off the blade, then mixed again a few times.  Leave the nuts and coconut a little bigger for added texture.  Add the chocolate chips and pulse a few times to combine.  Spread the mixture into a 9x5 inch bread pan that is lined with nonstick foil (or spread coconut oil evenly in the pan).  Let chill in the refrigerator for at least an hour before cutting into squares.  Store in an airtight container in the refrigerator.

Coconut Almond Raw Chewy Fudge

These are good!  A while back, I bought 10 pounds of pitted dates (from a nut company that ships products) and keep them in the freezer.  After a short soaking in some water, they are ready to be made in to all kinds of treats.  I’ve also recently made some of these “raw brownies” with some dried bananas, peanut butter and peanuts as the star (and chocolate!).  I need to tweak that recipe just a bit but I will share it soon. I like using cashews as the base nut, then using other nuts for the different flavors.  Cashews don’t seem to have a major distinct flavor so they work well.  I buy them in bulk as well.

Chocolate Peanut Butter “Granola” Bars (Oat and Grain Free)

Chocolate Peanut Butter Granola Bars (Oat-Grain Free)

These might just look like every other granola bar you’ve seen and you might even be wondering why “granola” is in quotes in the title.  That would be because there are no oats or grain in these.  The kick of flavor from all the different nuts, coconut, and of course, chocolate is heavenly in these bars and the grain is not missed at all.

I made these right before my family reunion in June.  When getting out other desserts to share, I snuck one of these out of the fridge for me (since I’m not eating any of the other treats that were available) and my brother, Matt, asked what they were.  He was interested in them since he tries not to eat much sugar and he knew they were probably healthy since I was eating them.

Within minutes, they were almost completely gone.  Matt loved them.  He encouraged others to try them and they liked them as well.  I hurried and snuck a couple more bars to save for me for another time and let them get devoured.  Without oats and other grains, the nutty flavor is intensified and these have just the right amount of chocolate.

I got this recipe from Danielle’s blog, Against All Grain.  Love her blog and cookbook and her!

Chocolate Peanut Butter “Granola” Bars, adapted by Katrina, Baking and Boys! from Danielle at Against All Grain

1/4 cup (84 grams) raw honey

1/2 cup (148 grams) organic, natural peanut butter

2 tablespoons (28 grams) coconut oil

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup raw almonds

1/2 cup raw walnuts

1/2 cup raw pecans

1/2 cup raw cashews

7 pitted dates, roughly chopped to check for pits

1/4 cup raw sunflower seeds

1/4 cup shredded, unsweetened coconut

1/4 cup Enjoy Life mini chocolate chips

Line an 8x8 inch baking pan with nonstick foil.  Set aside.  In a small saucepan, combine the honey, peanut butter, coconut oil and salt.  Heat until all melted and combined together.  Stir in the vanilla.  In the meantime, put all of the nuts and the dates in a food processor and pulse until mixture resembles course sand.  Add the sunflower seeds and coconut and pulse a few times until they are mixed well with the other nuts.  Remove the peanut butter mixture from the stove and stir the nut mixture into it.  Once it is all combined, pour the mixture into the prepared pan.  Place a piece of parchment or waxed paper on the top and press it down evenly with your hands.  Remove the paper from the top and sprinkle the chocolate chips on top and again using the parchment/waxed paper, press them in to the top of the bars.  Put the pan in the freezer and freeze for 2 hours.  Remove bars from the pan and the foil and cut into desired sized bars on a cutting board.  Store in an airtight container in the fridge for 2 weeks.

Chocolate Peanut Butter "Granola" Bars

It’s official, I am making these again today.  They are full of nuts and pretty sweet, I think the bars could even be cut smaller than I did in the photos.  But at this size, they are a perfect snack or energy bar.

Orange Agave Chocolate Chip Cookies, Plus Two More(All Gluten Free and Vegan)—Secret Recipe Club

Orange Agave Vegan Chocolate Chip Cookie-Dec. SRC (11-21-13)

I get to share three different cookies with you today for Secret Recipe Club.  I only picked one recipe from my assigned blog, Love & Flour, but I liked this Orange Agave Chocolate Chip Cookie so much that I played around with it and made three different versions using the basics of this recipe.  Of course, I love that they are made with agave for the sweetener.   Then I just made them gluten free with an all purpose gluten free pastry flour.

I love the texture of these cookies, they are almost a little sandy shortbread-like.  Oh, they are also vegan, I like that, too.  People who eat vegan are on to something—you can safely eat all cookie dough!  Instead of using canola oil, which was called for in the recipe, I used coconut oil.  And I used Enjoy Life mini chocolate chips.  These are so easy to whip up in one bowl (without a mixer), especially since I halved Leandra’s recipe, that I decided to try a couple other versions of the cookie.  All three are really good to me!

Orange Agave Vegan Chocolate Chip Cookies--Dec. SRC 11-21-13

Orange Agave Chocolate Chip Cookies (Gluten Free and Vegan), by Katrina, Baking and Boys!, adapted from Love & Flour

1/3 cup agave nectar

5 tablespoons (70 grams) coconut oil

1/2 tablespoon ground flax

3/4 teaspoon vanilla extract

1/2 teaspoon orange extract

zest of 1 mandarin orange (or 1-2 teaspoons orange zest)

1  1/2 cups gluten free pastry flour

1/2 teaspoon xanthan gum

1/2 teaspoon baking soda

1/8 teaspoon salt

1/4 cup Enjoy Life mini chocolate chips

Preheat oven to 325 degrees F.  Line baking sheets with parchment paper.  Cream together in a bowl the agave and coconut oil until well combined.  Add the flax, extracts, and zest and stir together.  Then add the flour (you can use regular all purpose flour and not make these gluten free), xanthan gum, baking soda and salt.  Stir together until well mixed into a cookie dough.  Stir in the chocolate chips.  Roll dough into 1-inch sized balls and place on baking sheet.  Bake for 12 minutes.  Let cool on baking sheet for a few minutes before moving to a wire rack to finish cooling.  Makes 12-15 cookies.

*Raspberry Version.  Leave out the orange extract and add 1/2 cup freeze dried raspberries.

Agave Raspberry Chocolate Chip Cookies (Gluten Free, Vegan)

See, you know you want to just eat the dough.  The second time I made them, I left out the orange extract and zest and just added some freeze dried raspberries to the dough.  Delicious!  I love the combination of raspberry and chocolate.

Then I had the thought yesterday to try the cookies with honey instead of agave and replacing some of the flour with cocoa powder—double chocolate.  I really couldn’t tell you which of these I like the most. Here’s the quick recipe for the double chocolate cookies, since I changed the recipe a bit.

Double Chocolate Chip Gluten Free Vegan Cookies, by Katrina, Baking and Boys!

1/3 cup raw honey

5 tablespoons (70 grams) coconut oil

1/2 tablespoon ground flax

3/4 teaspoon vanilla extract

1 cup gluten free pastry flour

1/4 teaspoon xanthan gum

5 tablespoons cocoa powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1/3 cup organic semi sweet chocolate chips

Preheat oven to 325 degrees F.  Line baking sheets with parchment paper.  Cream together in a bowl the honey and coconut oil until well combined.  Add the flax and vanilla and stir together.  Then add the flour (you can use regular all purpose flour and not make these gluten free, if you do, you don’t need the xanthan gum), xanthan gum, cocoa powder, baking soda and salt.

I think I liked the dough for these double chocolate cookies the best, at least I think I tasted it the most. ; )  I forgot to take a picture of the dough for these.

Grain Free Chewy Chocolate Chip Cookies (Refined Sugar Free)

Grain Free Almond Butter Chocolate Chip Cookies

Yesterday I posted the Healthy Fudgy Brownie Bites and mentioned how they are now one of my favorite treats.  On Facebook I also mentioned that besides those I have found some fantastic, perfectly chewy, you'd-never-know-they-were-healthy chocolate chip cookies.  I think I might just keep a running stock of these two things and I’ll be good for a long time—though that wouldn’t be fun to not keep trying new things, would it? ;)

Well, these are definitely great chocolate chip cookies and if you didn’t tell anyone, I think they’d never know they didn’t have flour or refined sugar.  I plan to make them again, maybe even today.  They have some coconut in them, which might add to the chewiness.  I think I’ll try them without the coconut, but with lots of nuts and see if they are still pretty much the same.  These also have no added oil or butter—just almond butter.  Instead of loads of sugar they just have a little honey in them.  I used the Enjoy Life mini chocolate chips, which happen to be soy free, dairy free, refined sugar free and grain free.  You could use any kind that suits your diet needs.

Once again I found these cookies at Jennifer’s blog, Unrefined Kitchen.  She has so many recipes that I want to try.  SO glad I tried these.  Looking through the recipe, I didn’t really change anything, so the link goes to her recipe.  She mentioned using 1/3 cup of honey and more if you’d like—I only used 1/3 cup and they are perfectly sweet.  She also suggested trying nuts in place of some of the coconut, so that is what I did—1/3 cup of unsweetened coconut and 1/3 cup of pecans.  My next try (today?) will be leaving out the coconut.  I love the coconut, but some people who are taste testers of mine don’t like it.  I baked the cookies about 10 minutes.  My scoop must be a bit bigger than Jennifer’s scoop, as I only got 16 cookies and she said the recipe makes about 20.  I used homemade almond butter.

Grain Free Almond Butter Chocolate Chip CookiesYep, just finishing up this post and seeing these photos, I need to make these again—today.  Need to run and get more chocolate chips first.  Give them a try.

Here’s the link again for Jennifer’s Almond Butter Dark Chocolate Chip Cookies at Unrefined Kitchen.

I tried, but you still can’t see the amazing texture and chewiness these cookies have in the crosscut photo, you’ll just have to taste them for yourself.
