So I know, the year is practically fleeing before our very eyes and I haven’t even posted yet in 2016.  I have reasons.  They seem like good ones, but still I hate that haven’t had anything to share.  I have plenty of excuses, like my blog issues, still dealing with that as I was in December.  Then my old laptop had some serious problems.  It’s gone.  My awesome husband got me a new, nicer laptop that hopefully I will not have the same kind of problems I had with the old one.  We also made the mistake of not getting the warranty on the old computer which has been a problem since day one.  RIP, year old laptop, that poor thing just never had a chance. 
So I’m trying to get something posted before January 2016 is in the history books.  And I’m not even sure it will post because of the blog issues.  I know most people out there have beautiful, wonderful blogs that looks so good and I know that mine is the same it has been for almost eight years now, but I don’t really have it in me to make those changes.  I would if it was just the snap of my fingers, I would have done it long ago, but alas, it is not to be.  So let’s see if this works.
The holidays are gone, but my love for ginger cookies (and all things ginger flavored for that matter) is not gone.  So a couple weeks ago I made some really good, or dare I say, perfect gluten free ginger cookies.  I was happy and wish I still had some.  I’ll make them again even though the season for ginger is over.  Who decided that anyway?  I’m sticking with what I like any time of the year.  You with me on that?

The cookies have the perfect amount of crisp snap that I like, but are still a little softer and chewy in the middle.  If you don’t know me well enough by now, I put chocolate in just about everything, so these ginger cookies were made perfect for me with the addition of some chopped chocolate (the kind I used just happened be organic dark chocolate and had crystallized ginger in it).  You can use any chocolate chips or chocolate you’d like or if you’re a ginger purest, you can leave it out, but chocolate and ginger are one of those matches made in heaven.  Just saying.

2 cups gluten free flour blend
1  1/2 teaspoons baking soda
1/4 teaspoon salt
1  1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
1/2 cup unsalted butter, softened
1/4 cup organic cane sugar
1/2 cup coconut sugar
1 large egg
1/4 cup unsulphured molasses
2 teaspoon balsamic vinegar
1 teaspoon vanilla extract
1/2 cup (3 ounces) chopped chocolate or chips
Sugar in the Raw (turbinado sugar) for sprinkling on top
Preheat oven to 350 degrees F.  Line baking sheets with parchment paper.  In a medium sized bowl, combine all the dry ingredients down to the pepper and whisk together.  In the bowl of a mixer, combine the butter, cane sugar and coconut sugar and beat for a couple minutes until creamy.  Scrape the sides of the bowl.  Add the egg, molasses, balsamic vinegar and vanilla and beat until well combined.  Scrape the sides of the bowl.  Add the dry ingredients and beat just until combined.  Stir in the chocolate.  Scoop the cookies into walnut sized balls and sprinkle each with some Sugar in the Raw.  (You can roll them in the sugar, but I was going for less sugar.)  Bake for 10-12 minutes (depending on how firm/crunchy you want them).  Let sit on baking sheet for a few minutes then move them to a cooling rack to cool completely.  Makes about 3 dozen.  Store in an airtight container.

I don’t think anyone would have a clue that these are gluten free.  But here at my house, I like to tell the boys when I’ve made something gluten free, it stops them from eating MY cookies because they assume they don’t taste good. ; )  Works for me.

Gingerbread Buche de Noel—Tuesdays With Dorie—Baking Chez Moi

Wait—before the year is over, I must post about this Tuesdays With Dorie recipe we made in the group over Christmas!  I’m a little late on posting it.  The date was for the Tuesday before Christmas, but I wanted to make it for Christmas Eve, so didn’t get it posted—until now—all the sudden it’s New Year’s Eve!  I did make this for Christmas Eve and I must say, though it was a huge labor of love and there were many steps to follow, I have learned that with Dorie’s recipes, if I do just that—follow all directions, the recipes always turn out great.  That said, I followed all the steps perfectly, except I decided to try making it gluten free and used organic cane sugars.

Oh, look, two skinny little ends cut off.  I had to taste them for quality control!

I had high hopes that since the cake only called for 3/4 cup of flour that changing it to a gluten free flour blend would probably be okay.  I was going to retype the recipe as I made it, but I really didn’t change anything except the flour (I happened to have some Pamela’s Gluten Free Baking Mix, so that is what I used) and I used organic cane sugar and organic brown sugar.  All the many involved steps to the recipe were not changed at all.  And though I say it was a labor of love and there were what seemed like many steps involved, it was SO worth it.  I would certainly make this cake again for a special occasion.

The gingerbread flavor was not too strong, so I think this cake could be made year round.  And even if it was a strong ginger flavor, I would not be against making this in the summer if I really felt like it.  ; )

The cake roll worked perfectly—that’s always a worry that it will not roll up nicely.  This rolled perfectly with not even any cracking.  The filling is a nice cream cheese/butter filling that isn’t sweet at all and then the delicious egg white/sugar syrup frosting is a perfectly sweet addition to the cake.  Also loved the pecan praline crunch that was in the filling and on the top of the cake. 

TWD--Gingerbread Buche de NoelThis cake was my big holiday splurge and I won’t tell you how many pieces of it I ate (not all in one sitting).  I took the cake to a family Christmas Eve celebration and it was well liked by everyone who ate some of it.  Nice thing about those big family get-togethers—so many desserts that I was able to bring a little bit of the cake home to enjoy later.

Betcha anyone coming over here from the Secret Recipe Club that knows me well is shocked that this is my pick for the month and it’s not dessert!  Here’s the deal—I made three recipes from my blog assignment this month and chose the one I liked the most to feature here first.  I liked all three recipes from Isabelle’s blog, Crumb.  I am so happy that I took the time to make these Red Lentil Patties with Spicy Tomato Jam.  I had them in mind the whole month and just kept not getting it done. 

In the meantime, after spending Mother’s Day weekend with my parents in Idaho, I brought home a bunch of rhubarb from their garden.

My parents just celebrated their 50th wedding anniversary on May 16th!  Anyway, their yard and garden is beautiful and they have 3-4 big rhubarb plants.  I got to bring home a bunch.

How cool is this pvc pipe planter?  They made holes all along the top, filled them with dirt and planted things like lettuce and herbs.  They’ve done that all along fencing in their yard.  No weeding!

I could post more pictures, but I’ll spare you too many more.  I just wish I could be like my parents and have a yard and garden like they do!

Back to the rhubarb—I scoured Isabelle’s blog for any rhubarb recipes and found this Rhubarb Walnut Loaf.  I decided that it wouldn’t be too difficult to make gluten free and made it.

Here’s how I changed it to be gluten free and with a few other changes.

2/3 cup organic brown cane sugar

1/2 cup coconut oil

1 large egg

1 tablespoon vanilla extract

1 cup canned coconut milk

zest of 1 lemon

1  1/2 cups diced rhubarb

2  1/2 cups gluten free flour (I used Premium Gold ancient grains blend with xanthan gum)

2 tablespoons ground ginger

1/4 teaspoon ground cinnamon

1 tablespoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts

1/4 cup organic brown cane sugar

juice of a lemon

1 tablespoon toasted unsweetened coconut.

Preheat oven to 350 degrees.  Whisk together the brown sugar and coconut oil.  Add the egg and mix well.  Stir in the vanilla and coconut milk.  Zest and juice the lemon.  Stir the zest into the wet mixture.  Save the lemon juice for the glaze.

Whisk together the flour, ginger, cinnamon, baking soda, baking powder, and salt in a separate bowl.  Add the dry ingredients to the wet and stir just until combined.  Fold in the rhubarb and nuts.    Pour the batter into a 9x5 loaf pan that his brushed with coconut oil.  Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

Whisk together the 1/4 cup of brown sugar and lemon juice and bring to a simmer in a small saucepan until the sugar is dissolved.  Pour the glaze over the loaf as soon as it comes out of the oven.  Sprinkle with coconut.  Cool on a wire rack.

Stay tuned for the red lentil patties and tomato jam, I’ll get to it soon.  It might be the first time in my blog’s history that I didn’t blog for a whole month.  I need to make up for lost time.  A bit more of the month went by and I still kept thinking about the lentil patties with homemade “catsup”.  I looked through Isabelle’s blog again, just for the heck of it and found these Cherry Walnut Oatmeal Breakfast Bars and felt like making them.  I made a few changes, using gluten free oats, brown rice flour, cranberries, sunflower seeds, almond milk, etc.  If you want my version of the recipe, let me know.  They were a good snack throughout the last week.

Gluten Free Cranberry Walnut Oatmeal Breakfast Bars

I didn’t think I was going to get the lentil patties made.  I knew if I made them they would only be something I would eat and no one else around here, but a couple days ago, I just decided to get it done last Thursday, the boys’ last full day of school.  I started with the Spicy Tomato Jam.  Super easy and very tasty!

1 tablespoon olive oil

1 clove garlic, finely minced

1 small shallot, finely minced

1 tablespoon grated fresh ginger

1/4 teaspoon dry ground mustard

1/4 cup apple cider vinegar

14 ounce can of whole tomatoes, drained and chopped

1/4 cup organic brown cane sugar

1/2 teaspoon ground cumin

1/4 teaspoon ground red pepper

Saute the shallot and ginger in olive oil for a couple minutes.  Add the garlic and mustard and saute until fragrant.  Chop the tomatoes, or pulse them in a food processor.  Add all the remaining ingredients and bring to a simmer.  Reduce heat and cook uncovered for about an hour, stirring occasionally, until it has thickened like jam.  Let the jam cool, then spoon into a jar and refrigerate until ready to use.

This really has great flavor and a nice, perfect kick.  You can add a little more or less red pepper to your taste.  Isabelle used red pepper flakes.  I prefer the ground kind.  This tomato jam would be good on so many things.  After the jam was done, I made the patties.  I had bought some garam masala, which I had never used before, just to make these.  I’m glad I did!

Since I was the only one eating these, I made just a few of them and have done so a couple times with the patty mixture in the refrigerator ready to make more.   I think I’ll fry off the rest of them, which I’ve done in coconut oil, and freeze them.  I made them gluten free by using rice flour instead of all purpose flour.

1  1/2 cups red lentils

3 cups water

1 small shallot, finely minced

2 cloves garlic, finely minced

2 teaspoons garam masala

1/2 teaspoon ground cumin

2 large eggs

1/2 cup brown rice flour

1 teaspoon salt

1 teaspoon freshly ground black pepper

1/4 cup finely chopped cilantro

coconut oil, for frying

In a large saucepan, bring the lentils and water to a boil.  Reduce heat to low and simmer until lentils are soft, 15-20 minutes.  Drain lentils well.  In a skillet, saute the shallot in olive oil for a few minutes.  Add the garlic, cumin, and garam masala.  Cook and stir a few more minutes.  Remove from heat.  In a large bowl, combine the lentils, sauteed ingredients, eggs, flour, salt, pepper and cilantro.  Form into balls (or use a cookie scoop).  Lay them in a skillet that is heated with a couple tablespoons of coconut oil and flatten them to about 1/4 inch thick.  Fry the patties for about 5 minutes per side or until golden brown and crisp.

Serve them warm or at room temperature with the spicy tomato jam.

These really were quite simple to make and I’m so glad I found the time to do so!  You know, a couple years ago, I got the pleasure of filling in for a missing Secret Recipe Club assignment and made some delicious marbled choco banana muffins and granola from Isabelle’s blog.  What I wouldn’t give for one of those muffins now!  I also just realized and had thought I had been assigned Isabelle’s blog before, but knew I’d filled in once, so I didn’t question it until now—I have also already had an actual assignment for Crumb and I made a couple more things--Warm Raspberry Chocolate Pudding Cake and Sweet Potato Falafel!  I knew something seemed off, but didn’t question it.  Oh well, I am super glad I got to find more yummy things on Isabelle’s blog!  We need to have a talk with “the powers that be” who make these assignments. ;  )

Grain Free Gingerbread Blondies with Chocolate Chips (also refined sugar free)

Probably the last thing I’m able to get posted before Christmas, sure wish I could get to posting more often like I used to.  Someday.  I’ve missed it.  But here we are, the last week of December, Christmas Eve tomorrow and the year is gone.  2013, not my favorite year, we’ve sure had our fair share of trials in our family.  Bring on 2014!  I wish you all a wonderful holiday season and a great coming new year as well!

I haven’t been making as many treats as I’d like.  Just haven’t had the energy to do so.  Bums me out!  But I did make a few things worthy of getting posted, so here’s one.  I took a few ideas and recipes that were grain free, refined sugar free and made these blondies.  I’ve been craving gingerbread like crazy and these have really hit the spot.  I do like gingerbread without chocolate, but for some reason I prefer it WITH chocolate—go figure.

These are simply made with almond butter and coconut sugar for the sweetener.  There is a little coconut flour in them as well as some molasses and those wonderful spices that make gingerbread so good.  I have really enjoyed them slightly heated up with a few more chocolate chips on top—they get all melty and add a nice topping.  They are just find without the extra chocolate.

Grain Free Gingerbread Blondies with Chocolate Chips, by Katrina, Baking and Boys!

1 cup almond butter (I made my own with almonds I roasted)

2 tablespoons unsulphured blackstrap molasses (It doesn’t have to be blackstrap)

2 large eggs

2/3 cup coconut sugar

1/4 cup coconut flour

1 teaspoon baking soda

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

pinch of salt

1/3 cup Organic Fair Trade chocolate chips, more for topping if desired

Preheat oven to 350 degrees F.  Line an 8 inch square baking pan with nonstick foil (or grease with coconut oil).  Set aside.

In a large bowl, combine the almond butter, molasses, eggs and coconut sugar.  Whisk together until well mixed.  (This can all be done by hand or with an electric mixer.)  In a small bowl, whisk together the coconut flour, baking soda, ginger, cinnamon and salt.  Add the flour mixture to the wet ingredients and stir until combined.  Fold in the chocolate chips.  Spread the mixture evenly into the baking pan.  Bake for 12-15 minutes.  Let cool then remove from pan by lifting the edges of the foil and cut into squares.

Put those few extra chocolate chips on top of a piece of the blondies and  warm it up for 15-20 seconds.  Then let it sit for a minute.  The chocolate will melt a little, then just spread it over the top, it wasn’t all that pretty when I did it that way late one night, so I don’t have a photo, but it sure tasted great!

Grain Free No Bake Gingerbread Cookie Balls, also Gluten Free, Vegan and Refined Sugar Free

Yesterday I made two batches of cookies and some Gingerbread Cookie Bars (I mentioned them on Facebook, they are from Six Sisters’ Stuff).  I love baking.  But I am SO happy to know that I can still have yummy, much-healthier treats, too, even though I am  no longer eating gluten or refined sugars.  Here’s the link for the Salted Caramel Cheesecake Chocolate Chip Cookies I posted recently.  I made two kinds of them, some had white chocolate chips and coconut and some had semi sweet chocolate chips and M&M’s, the caramel is the sticky star of these cookies, and the flavor and texture from the cream cheese in the cookie dough.

These Grain Free No Bake Gingerbread Cookie Balls from Beth at Tasty Yummies hit the spot and are delicious!  They are super easy to make, have just a few ingredients and those delicious holiday spices that I was going crazy over smelling while I made the Gingerbread Cookie Bars. 

Simple and great and they do not even any oven time, I didn’t change a thing from Beth’s recipe—so go there now and make these.  They are a perfect treat for when you’re in the kitchen baking away other goodies for people and wish you could have just a little something.  They would also be great to give away to others.  I love all the no-bake treats out there, especially the ones like these with no refined sugars!

That MIGHT be enough for me to snack on for a few days.  They are made with nuts and dates, a little molasses (unsulphured organic) and yummy spices.  They are rolled in unsweetened coconut, but they wouldn’t need to be and I think I’ll leave them “plain” next time I make them (in a few days).  One more photo, since you need to see them again and since I’m not posting the recipe.  Go to the link above for Beth’s recipe.

Grain Free Pumpkin Gingerbread Cake

I wasn’t planning to go all pumpkin crazy like all the food blogs are starting to do and I probably still won’t have like 30 days of all pumpkin posts or something like that, but I was actually just walking by the pantry one day recently and right there staring at me was a can of pumpkin.  It was a sign.  I needed to make something with it. 

After searching for just the thing I was craving, I found this cake.  It was everything I was looking for and craving.  It’s got those fall spices we all love and has healthy pumpkin in it, not to mention almond butter and raw honey to sweeten it.  Can hardly believe making a cake with no flour turned out so well.  You really wouldn’t know there is no flour.  It would be fun to have someone try it who didn’t know and see if they could tell what was different.  I’ve made a couple other things that are completely grain free, like brownies and they are really good.

I take no credit for the cake.  I found this at Mel’s blog, The Clothes Make the Girl.  Haven’t seen or heard of this blog before, but I love discovering new ones and will be back.  I didn’t change a whole lot of Mel’s recipe, but will retype it with my changes.  She also frosted her cake with a maple-vanilla frosting that is made with coconut butter.  This cake doesn’t even really need anything, it’s a great snack cake.  I certainly played around with toppings though.  Melted chocolate is my favorite way to top a slice of this cake.  I just love chocolate with fall spices like cinnamon and ginger.  I also topped some with some whipped coconut cream and while that’s good, too, I prefer the chocolate.  (Go figure.) ;)  Stock up on almonds and make your own almond butter, it’s much cheaper than buying almond butter.  Mel used Justin’s Maple Almond Butter and suggested if you didn’t use that to add some maple syrup, so that is what I did.  I’m tempted when I make this cake again to use maple syrup for the sweetener instead of honey to really bump up the maple flavor.

1 cup pumpkin puree

1 cup almond butter

1 tablespoon maple syrup

1/4 cup raw honey

2 large eggs

1 teaspoon vanilla extract

1  1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/8 teaspoon cloves

1/4 teaspoon cardamom

1/2 teaspoon lemon zest

Topping (optional):

1-2 ounces Enjoy life mini chocolate chips, melted

coconut cream, whipped  (or heavy whipping cream)

maple syrup or honey to drizzle over slices

Preheat oven to 350 degrees F.  Line an 8 inch square baking pan with nonstick foil (foil is optional), coat the bottom and sides with a light coating of coconut oil. In a large bowl, combine the pumpkin, almond butter, maple syrup, honey and eggs and whisk together.  In a small bowl, combine the baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves and cardamom and lemon zest.  Add to the wet ingredients and stir to combine.  Pour the batter into the prepared baking pan and spread evenly.  Bake for 30 minutes.

When the cake is cooled, remove from the pan by lifting the foil edges.  Cut into desired sized pieces.  Drizzle with melted chocolate or top with whipped coconut cream (or heavy whipping cream).  A drizzle of maple syrup or honey is great on the whipped cream.

 You could also put all the toppings on the cake to really kick it up! ;)  I still like the melted chocolate the best though.  Heck, it’s a great snack cake with no toppings as well.  Try it.

I couldn’t help it.  When I heard that someone in Group B of the Secret Recipe Club was going to be an orphan, with no one posting something from her blog, I had to do something about it.  Never fear though, because whenever that happens and it is announced on the SRC Facebook page, there are many volunteers in line to jump in and help—every time.  The Secret Recipe Club really is a great group of people.  I’m in Group A and there are four different groups.  Betcha can’t guess what the other groups are named? ;)

I almost had a knock down, drag out fight with Kirstin from Loving Life to get this orphan, then we compromised and both made something!  Nothing wrong with showing double the love for another blogger.  So I got busy and found something to make from Jane’s blog, Jane's Adventures in Dinner and you’ll never guess what I made?  Oh wait, there is a picture of them right there.  Okay, are you surprised, I made cookies?  I have a little secret, since this IS the Secret Recipe Club.  Every time I get an assignment, the first thing I look for on a blog is cookies.  Then, I look at all desserts.  THEN I look at the rest, the savory food.  Don’t get me wrong, I LOVE “real” food and actually eat lots of healthy food.  I have just found that I enjoy baking more than cooking.  It’s more fun to share baked goods.  I also can’t seem to take decent pictures of savory food to save my life.  AND, when I made something that will be for dinner, the family wants it right then and there.  They hate when I make them wait for photos first. ;) 

After a quick search through the cookies and desserts on Jane’s blog, I settled on some that she actually just posted a few weeks ago.  These Coconut Chocolate Chip Cookies were super easy and delicious!  Not only do they have coconut added but a surprise ingredient as well—crystallized ginger.

I only made half a batch of the cookies because I thought my boys would turn up their noses at the ginger and not eat them.  I was wrong.  They are going fast and Taylor in particular loves them.   GREAT cookie!  I made a few minor changes to Jane’s recipe.  I added some salt as I used unsalted butter and she didn’t have salt in her recipe.  I also added more chocolate chips than it called for—because, I’m a rebel, plain and simple.  And I added a little more flour than she did, but that is more because of our high altitude and I didn’t want the cookies to be flat.  They were not at all!

Coconut Chocolate Chip Cookies with Crystallized Ginger, by Katrina, Baking and Boys!, adapted from Jane at Jane's Adventures in Dinner

1/2 cup unsalted butter, softened

1/3 cup brown sugar

1/4 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract

1/2 cup shredded sweetened coconut

1  1/2 cups (180 grams) all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

4 ounces dark chocolate chips (about 2/3 cups)

1 tablespoon crystallized ginger, chopped finely

Preheat oven to 375 degrees F. (Jane’s recipe baked at 350 degrees.)  Line two baking sheets with parchment paper.  Cream together the butter and sugars in an electric mixer.  Scrape the sides of the bowl.  Add the egg and vanilla and cream until light and fluffy.  Scrape sides of bowl again.  Add all the dry ingredients in a separate bowl and whisk to combine.  Add the dry ingredients to the creamed mixture.  Stir in the chocolate chips, coconut and ginger.  Bake for 10-12 minutes.  Let cool on baking sheet for a few minutes before moving them to a wire rack to cool completely.
