No Bake Coconut Almond Chocolate Chip Oat Bites

A perfect, easy, sweet treat!

 

These would be great for any Almond Joy lover, but someone looking for something a little more healthy.  Like me.

 

I know, it’s been a month since I posted anything.  I’ve been in a bit of a baking, sweet sharing slump.  I’ll never be gone for good, but seem to just be slowing down a bit with things I must share.  I whipped these super simple no bake bites up today and decided to get them posted for you. 

 

I will say, I got my inspiration for these from a blog, The Beaming Baker, when her No Bake Peanut Butter Coconut Bites showed up on Pinterest and Facebook.  I changed up her recipe since I’d just made some homemade almond butter and had finished off a jar of peanut butter.  These will sure be nice to have around for a snack as sometimes I can’t find anything I’m hankering for and it needs to be somewhat sweet.  Otherwise, I eat sugar snap peas like they are Lays potato chips and I can only eat so many of them before I’ll have pea sprouts coming out my ears or something. ; )

3/4 cup almond butter (I made homemade with raw almonds, but you can use a purchased one also)

1/4 cup raw honey (I also added another tablespoon of honey after decided it needed a bit more, start with 1/4 cup)

1/2 teaspoon vanilla extract

3/4 cup shredded, unsweetened coconut

3/4 cup gluten free old fashioned oats

1/4 cup ground flaxseed

1/4 cup chopped almonds

6 tablespoons Enjoy Life mini chocolate chips

 

In a medium sized bowl, combine the almond butter, honey and vanilla.  Stir together well.  Add the coconut, oats, flaxseed, almonds and chocolate chips.  Stir until all combined.  Decide if it needs a little more honey by making a ball of the mixture in your hands and squeezing it together.  When I make almond butter, it’s a little thicker than the store bought kind, so using a runnier one may make the mixture wet/sticky enough to combine.  Using your hands, form the mixture into about 1 inch balls, squeezing the mixture together so it stays in its shape.  Lay them on a waxed paper lined sheet.  Makes 16-20 depending on size.  Store in an airtight container at room temperature.

Eight Years of Blogging! Chocolate Drizzled Toasted Almond Coconut Macaroons

Today it has been eight years since I started my blog!  I cannot believe it—eight years!  When I started it, just to keep track of and share happenings of my boys and my life with my family and friends, I had no idea I’d still be at it this many years later.  My boys are sure growing up!

It’s strange to think back to 2008.  Sam wasn’t even one when I started my blog.  He’s now almost nine!  Scott is 17, Parker is 14, and Taylor is 12!  Bah!!!  It’s too much to keep thinking about, so let’s talk macaroons instead.

 

I love coconut.  I don’t think I’ve ever met or made a macaroon I didn’t like.  But I think I’ve made one that might be my favorite now….and for always?  These have toasted almonds, ground nice and finely.  They are made with coconut sugar and raw honey, unsweetened coconut and egg whites.  Perfectly gluten free and refined sugar free, but you must believe me—they are so good.  Perfect, if I must say so.  Yes, they are great plain, as is.  But if you know me, I have to add a little chocolate to just about everything.  So I melted some Enjoy Life chocolate chips and drizzled it over the tops of the cookies, then sprinkled some more of the freshly ground toasted almonds on top.  Heavenly!

 

Coconut Macaroons

They really are great without the chocolate.  I know, I ate a few of them before the chocolate came along.  But come on—everything is better with chocolate.  It had to be done.  I just wouldn’t be me if I hadn’t.  You want the recipe, I know, that’s really why you’re here. 

 

Chocolate Drizzled Toasted Almond Coconut Macaroons

Can you guess which one I ate first?  That’s right—the one where the bigger drizzle of chocolate fell upon it. ; )

 

Chocolate Drizzled Toasted Almond Coconut Macaroons, by Katrina, Baking and Boys! (Gluten Free, Grain Free, Paleo, Refined Sugar Free)

 

2 large egg whites, room temperature

1/4 cup coconut sugar

1/4 cup raw honey

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1/8 teaspoon salt

3 cups unsweetened (dessicated) shredded coconut

1/2 cup freshly toasted, then finely ground almonds*

3-4 ounces Enjoy Life chocolate chips (3 ounces is 1/2 cup)

1/2 teaspoon coconut oil

 

Preheat oven to 350 degrees F.  Line baking sheets with parchment paper.  In the bowl of a stand mixer, add the egg whites and begin beating them on high speed with the wire attachment until foamy.  Gradually add the coconut sugar then the honey. Scrape the sides of the bowl.  Add the vanilla, almond extract and salt and beat until soft peaks form.  Fold the coconut and ground almonds into the egg white mixture.  Using a cookie scoop, put the coconut mixture into mounds on the baking sheet, using your hands/fingers form each firmly together on the tops.  They can be fairly close together on the baking sheet as they do not spread.  Makes about 16 cookies.  Bake for 15 minutes.  Let cool on the baking sheet until almost cool.  Remove to a wire rack to cool completely.  Melt the chocolate in a glass dish in the microwave in 20-30 second intervals, stirring in between.  When it is almost completely melted, add the coconut oil and stir until melted and combined.  This only takes about 90 seconds total.  Using a small spoon (or add the chocolate to a sandwich-sized plastic zip top baggie with the corner snipped off), drizzle the chocolate over each cookie.  I happened to have some extra ground almonds and sprinkled it over each cookie.

I took the inspiration and basic recipe for these from a recipe for some macaroons I made a couple years ago that were also the bomb--White Chocolate Lime Coconut Macaroons and Dark Chocolate Hazelnut Coconut Macaroons.  These were also delicious!  Try them!  Credit goes again to What Jew Wanna Eat for the original recipe.

 

Happy Eight Years of Blogging to me.  Who knows—maybe another eight year or more?  I don’t even want to think about how grown up my boys would be then—and how old that would make me…..

True No Bake Cookies—The Easiest and Yummiest Cookies Ever

True No Bake Cookies

If you’re looking for the world’s most simple, yummiest treat (you could totally whip these up in minutes and serve them for New Year’s Eve tonight), this is the cookie!  There was recently a very small feud (not really a feud, just an observance) between a fellow food blogger and I about these classic no bake cookies.  This recipe I’ve made and posted today are THE original cookies, THE recipe I grew up making.  There are no other True No Bake Cookies. ; )  That said, Blaise from Blaise the Baker posted a step-by-step tutorial about these cookies yesterday on his Facebook page.  You can get his (not original, hehe) recipe on the link to his blog.  After I saw his post, it dawned on me that every time I have seen these cookies, for years—they have always had peanut butter in them.  I’m here to tell you, even as a chocolate and peanut butter lover, that these should not be made with peanut butter.  It’s wrong. 

Okay, okay, it’s probably not wrong.  But THE True No Bake Cookies I grew up with do not have peanut butter, so it has always seemed wrong to me.  After chatting with Blaise, I looked through my good old recipe box for the recipe.  And when I say old, I mean it—I have in that box recipes from when I took a cooking class in 7th grade, so we’re talking 34+ years ago.  Whew!  Anyway, there I found THE recipe!

And here I share THE recipe with YOU!  Peanut butter not necessary.  If you need the chocolate/peanut butter combo fix, eat a Reese’s. 

True No Bake Cookies

2 cups granulated sugar

1/2 cup unsalted butter

1/2 cup 2% milk

3 tablespoons cocoa powder

1/2 teaspoon salt

1 teaspoon vanilla

3 cups old fashioned oats

1/2 cup nuts (I always remember walnuts, peanuts are not an option, haha), optional

1 cup sweetened, shredded coconut, optional

In a large saucepan, over medium heat, combine together the sugar, butter, milk, cocoa and salt.  When it comes to a good rolling boil, boil for exactly one minute.  Remove from heat and add the vanilla.  Stir well.  Add the oats, coconut, and nuts and stir together to combine.  Drop by rounded spoonfuls onto waxed paper and let cool.  They don’t even take 30 minutes to cool and set up.  Serve the plateful and watch them disappear.  Makes 18-20.  (The nuts and coconut are optional.  I left out the nuts as my kids don’t love them.)

You do not need to make these all perfectly uniform.  They shouldn’t be.  That is what makes them “true”.

How do you make no bake cookies?  Wondering if I have other fellow non-peanut butter no bake cookie people out there.  I’m sure Blaise and all the others out there who put peanut butter in theirs still have a great cookie.  Just having a little fun.

Grain Free Blueberry Muffins (Gluten Free and Refined Sugar Free, too)

Sometimes I miss a good muffin.  You try to make a perfect one gluten and refined sugar free.  I realized I had some organic blueberries and that muffins should and could be made.  I checked out a number of different recipes online and went with a grain free one made with almond flour.  I am super happy with how these turned out.

My favorite part (besides the blueberries) is the coconut almond topping.  These were so easy to make.

1/4 cup (56 grams) coconut oil (the oil I used was already melted, it’s summertime)

1/4 cup (84 grams) raw honey

1 teaspoon vanilla extract

1 teaspoon almond extract

3 tablespoons full fat coconut milk

2 large farm fresh eggs, room temperature

2 cups (224 grams) almond flour

1 teaspoon baking powder

1/8 teaspoon salt

1 cup fresh blueberries, washed and set out in an even layer to dry

2 tablespoons chopped almonds (or pre-sliced)

2 tablespoons unsweetened flaked coconut

*Optional, 1 teaspoon lemon zest would be great added to the batter

Preheat oven to 350 degrees F.  Grease a muffin tin (only 9) with coconut oil, just put a couple drops of coconut oil in each one and rub it around evenly with your fingers.  Set aside.  In a medium sized bowl, add the coconut oil, raw honey, almond extract, vanilla extract and coconut milk.  Whisk together until well combined.  Whisk in the eggs.  Add the almond flour, baking powder and salt and stir with a wooden spoon just until combined.  Fold in the blueberries.  Fill each of the 9 muffins cups using a medium sized cookie scoop if you have one.  Combine the almonds and coconut together and sprinkle some on the top of each muffin.  Bake for 14-16 minutes.  Let sit for a few minutes in the tin, then carefully remove each just using your fingers.  None of them broke when I removed them from the pan.  If you tip them upside down out of the tin, you’ll lose a lot of the topping.  Let cool on a wire rack until you can’t stand it any longer and have to eat one…..or two.

These have a perfect slightly crisp outside and are tender and muffin-y on the inside.

The raw almonds and coconut toast perfectly on top of the muffins.  Sliced almonds would be great, but I didn’t have any.  Chopping whole almonds worked just fine!

Coconut Almond Raw Brownies

I need a treat—stat!  I made lots of goodies for our recent family reunion, cookies and cakes galore.  None of which I took a single bite of.  Go me, whatever.  I’m kind of over the whole thing of wishing I could eat certain things and for the most part seeing them and baking them doesn’t even  tempt me.  BUT, I do still need my own sweet treats now and then and these are perfect…and healthy!

I’ve posted similar things like these before, but looking back I didn’t see this exact thing with coconut and almonds (and chocolate!) being the star.  I did keep thinking of these Healthy Almond Joy or Mounds Coconut Candy that are dunked in a healthy melted chocolate, I suppose these are similar, but easier and a bit healthier since they aren’t dunked in more chocolate.  Never fear, there is a little Enjoy Life chocolate chips added.  You can make all kinds of flavors using different nuts and mix-ins.  I suppose they are similar to Lara Bars and other protein/energy bars, but I’ve tried some of those and I definitely think the homemade kind taste much better!

Coconut Almond Raw Brownies, by Katrina, Baking and Boys!

1 cup pitted dates, soaked in hot water about 10-15 minutes

¾ cup raw cashews

¼ cup raw cacao (or cocoa powder)

3 T. raw honey

¼ teaspoon almond extract

1/3 cup unsweetened shredded coconut

1/3 cup toasted almonds

2 T. Enjoy Life mini chocolate chips

After soaking the dates, drain the water and chop the dates on a cutting board.  This is to make sure there are no pits, sometimes they are still there ready to tear up your food processor. ; )  Put the chopped dates and cashews in a food processor and pulse until they are starting to be pretty finely ground.  Add the cacao and honey and continue letting the food processor blend them until they start forming a thick paste that clumps together.  Add the almond extract and pulse a few times.  Add the shredded coconut and toasted almonds and pulse until well combined.  The mixture may need to be scraped from the sides of the bowl and off the blade, then mixed again a few times.  Leave the nuts and coconut a little bigger for added texture.  Add the chocolate chips and pulse a few times to combine.  Spread the mixture into a 9x5 inch bread pan that is lined with nonstick foil (or spread coconut oil evenly in the pan).  Let chill in the refrigerator for at least an hour before cutting into squares.  Store in an airtight container in the refrigerator.

These are good!  A while back, I bought 10 pounds of pitted dates (from a nut company that ships products) and keep them in the freezer.  After a short soaking in some water, they are ready to be made in to all kinds of treats.  I’ve also recently made some of these “raw brownies” with some dried bananas, peanut butter and peanuts as the star (and chocolate!).  I need to tweak that recipe just a bit but I will share it soon. I like using cashews as the base nut, then using other nuts for the different flavors.  Cashews don’t seem to have a major distinct flavor so they work well.  I buy them in bulk as well.

Healthy Almond Joy or Mounds Coconut Candy

We all know the tune—“Sometimes you feel like a nut, sometimes you don’t.”  It’s just too perfect.  Not trying to steal from the real candy company, but it really is a perfect statement.  I’m so happy to have made these and to have a treat stashed away for me to enjoy!  I originally was just making another treat I could have with dates, but then decided after adding some coconut to try to form them into an egg-like shape and dunk them in melted chocolate.  I’m brilliant, I say! ; )  Okay, I have no idea if something similar has ever been done before, I didn’t even look, just was happy that I came up with this all on my own.  I’m such a big girl nowadays.

I love making different sweet treats with dates.  Like these Raw Brownies with Walnuts or these Chocolate Peanut Butter Grain Free "Granola" Bars.  I love them all and they are sure easy to make.  Can’t forget these Chocolate Hazelnut Bombs or these Healthy Fudgy Brownie Bites.  The possibilities with flavors are almost limitless.  Whatever will I decide to make next?

Healthy Almond Joy/Mounds Candy

Healthy Almond Joy or Mounds Coconut Candy (Grain Free, Refined Sugar Free, Dairy Free), by Katrina, Baking and Boys!

1  1/4 cup dates, pitted and cut into smaller pieces, soaked in warm water for 30 minutes

1 cup raw almonds

5 tablespoons cocoa powder

1 tablespoon date water

1 tablespoon raw honey

1 teaspoon vanilla extract

pinch of salt

1/4 cup unsweetened shredded coconut

1/4 cup unsweetened flaked coconut, these are the bigger pieces (or another 1/4 cup of shredded)

2 tablespoons Enjoy Life mini chocolate chips (dairy, grain, soy, egg free chocolate)

Chocolate coating (enough for half the bars, double if you want to coat all of them):

1/2 cup (3 ounces) Enjoy Life mini chocolate chips

1 teaspoon coconut oil

Presoak the dates, drain and reserve the water.  Cut them on a cutting board (even if you have pitted dates, you should always cut them to check for pits!).  Cutting them into pieces also makes them grind up in the food processor easier.  Put the dates and almonds in the bowl of a food processor.  Pulse until coarsely ground.  Add the cocoa powder and pulse a few times.  Add the water, honey and salt and let it grind until it all clumps together almost forming a ball around the bowl (it will take a couple minutes).  Add the coconut and chocolate chips and pulse just a few times to combine.  Line a 9x5 inch bread pan with waxed paper.  Press the mixture evenly into the pan.  Refrigerate for an hour (I happened to make mine one day and didn’t get to dip them in chocolate until the next day.)

Melt the chocolate chips and coconut oil in a microwave safe glass bowl in 20-30 second intervals, stirring after each one.  It should only take a minute or so.  Stir until smooth.  Remove the pan from the refrigerator and lift the sides of the waxed paper.  Set it on a cutting board and with a 1  1/2 inch round cutter, cut out circles of the date/nut mixture.  You can leave them in circles or form them into oval shape with your fingers.  It was super easy!  If you feel like a nut, dip one side of an almond into the melted chocolate and place it in the center of the candy oval.  Let the chocolate for those harden in the fridge for a few minutes.  Put each piece of candy on a fork and dip it into the melted chocolate, also spooning excess chocolate over the top.  Tap the candy on the sides of the glass bowl, letting the excess chocolate smooth out and drip down.  Place the candy on a wax paper lined plate.  When finished dipping the candy, put the plateful in the refrigerator until the chocolate is hardened (5-10 minutes).  (I only covered half the date candy in chocolate, but the rest is still sitting in the fridge waiting to be eaten plain—still good! or cut and dipped in more chocolate.)  The 3 ounces of melted chocolate was enough for about 8 candies.   Store candies in the refrigerator.

Healthy Date Coconut Candy 2You don’t HAVE to dip them in chocolate and they are still really good.  I like the bigger, flaked coconut in these.  But these are certainly delicious WITH the chocolate coating—just remember, “sometimes you feel like a nut…….sometimes you don’t”.  (And remember, no matter which way you do them, there’s almonds in the date mixture.)

Candied Date Crispies, Almost Like Aunt Helga’s

It’s time for a sweet, healthy treat!  Remember in August when I posted my last Secret Recipe Club post?  And I got to cook and bake deliciousness from Shelby’s blog, The Life and Loves of Grumpy's Honeybunch?

One of the things I made and posted about were her Aunt Helga's Candied Date Balls.  As much as I really did stick with the recipe, I did change it up enough that if you want her recipe, check it out, but here’s the recipe as I made it.  I swapped out the sugar and used a less amount of coconut sugar and some honey.  I also used coconut instead of butter and I used organic brown rice crispy cereal. 

These were a perfect treat for me for a good week or two when I’d just need a little something sweet.  I rolled some of them in chopped walnuts, some in unsweetened coconut and then of course, I had to add chocolate to the mix with some of them.

1/2 lb. (8 ounces) dates, pitted and finely chopped

scant 1/4 cup coconut sugar

2 tablespoons raw honey

1/4 cup coconut oil

2 cups organic brown rice crispy cereal (or crisp rice cereal of your choice)

finely chopped walnuts

shredded unsweetened coconut

2-4 tablespoons Enjoy Life mini chocolate chips (optional)

Simmer coconut oil, sugar, honey and dates in a saucepan over medium heat for 3-4 minutes, until dates have softened.  Remove from heat and stir in the cereal. Roll in to walnut sized balls.  Roll balls in finely chopped walnuts or coconut.  If desired, added some chocolate chips to some of the date mixture.  Since it is still warm, the chocolate melts and that is okay.  Then roll in nuts or coconut.  Set on baking sheet lined with waxed paper to firm and cool.  This made 6 walnut balls, 6 coconut balls and 5 with chocolate.

Almond Joy Coconut Chocolate Chip Cookies

Sure wish I shoulda-woulda-coulda tasted one of these cookies.  Okay, I could have, but didn’t.  I made a big batch of these using My Favorite Chocolate Chip Cookies recipe—you know—these--

I got this wild idea to make cookies with Almond Joy in them.  It was Kevin’s 40th birthday recently and I surprised him and had many friends over, some that he hasn’t seen for years and some of his favorite people, as well as some of his current friends.  He had no idea.  He just thought we were having our usual celebration of goodies with two of his sisters and their families.  It was such a fun evening and worked better than I thought it would. 

I also made some peanut butter overload cookies using the same recipe, but with lots of peanut buttery add ins, like chopped up Nutter Butter cookies, Reese’s pieces, and peanut butter chips as well as some chocolate chips.  Stay tuned for a post for those cookies!

Kevin loves Almond Joy cookies and likes pretty much anything with coconut, so I knew he’d like these and that others would, too.  

I’ve mentioned and posted before (link above) about my favorite chocolate chip cookies, they are my take on the famous Jacques Torres chocolate chip cookies, I’ve made a few slight changes, but a few things that make those cookies so good is that instead of all purpose flour, they have cake flour and bread flour.  I really think that these flours make all the difference in how the cookies come out, besides using the best chocolate chips you can find (I use Ghirardelli 60% chips, which are bigger and flatter, like the disks of chocolate Jacques uses).  I have had friends and family rave about my chocolate chip cookies for years, so I’m sticking with this recipe.  It’s worth it to me to always have bread and cake flour on hand.  As often as I make these cookies, I decided it was time to try them with other things added to them.  Yep, they turn out perfectly!  So I’m telling you, try the chocolate chip cookie recipe.  Once you do, you’ll never go back to another recipe. ; )

Almond Joy Coconut Chocolate Chip Cookies, by Katrina, Baking and Boys!

8 ½ ounces cake flour (2 cups minus 2 tablespoons) (lightly spooned into the measuring cup and swept level with a knife)

8 ½ ounces bread flour (1 and 2/3 cups) (lightly spooned and swept)

1 ¼ teaspoons baking soda

1 ½ teaspoons baking powder

1 ½ teaspoons coarse salt

2 ½ sticks (1 ¼ cups) unsalted butter, room temperature

10 ounces (1 ¼ cups) light brown sugar

8 ounces (1 cup plus 2 tablespoons) granulated sugar

2 large eggs

2 teaspoons vanilla extract

6 ounces (1 cup) dark chocolate chips or chopped chocolate (Ghirardelli 60% cacao chips are what I always use)

11.3 ounces (1 bag of fun size, or the equivalent) of Almond Joy candy bars, roughly chopped

1 cup sweetened, shredded coconut

(I was out of almonds, but would have added some more chopped, toasted ones if I’d had them)

Sift flours, baking soda, baking powder and salt into a bowl with a wire whisk. Set aside.

In bowl of electric mixer, cream together butter and sugars until light and fluffy, 3-5 minutes.  Add eggs, one at a time, mixing well after each addition.  Then add the vanilla and combine.  Scrape the sides of the bowl. With mixer on low, add dry ingredients and mix just until combined. Put the mix-ins in the bowl and carefully fold together with rubber spatula just until combined.  You don’t want to overmix the candy bars.  Scoop with a 2 ounce (1/4 cup scoop).  You should get 24 scoops.  Put them on a wax paper lined baking sheet.  Cover with foil and freeze (or refrigerate).

When ready to bake, preheat oven to 350 degrees. Line baking sheets with parchment paper and put the cookies on an air bake sheet, only 5 cookies per sheet.  Bake from frozen for about 12 minutes.  Check the cookies, remove from the oven and with the sides of a metal spatula, if any of the cookies are misshapen and not nicely rounded, push the spatula lightly on to the cookies where they need rounded around the edges.  Decide if they need another minute or two in the oven.  Sometimes I think they do, sometimes they are perfect.  Let them cool on the baking sheet for 5-10 minutes.  Remove to a wire rack to cool until you can’t stand it anymore and have to taste one.  (If you have a convection oven, you can bake 2 or 3 cookie sheets at a time.  Every oven is different, but even though baking on convection you should lower the temperature 25 degrees, I still leave mine at 350 for these.)  Test yours for best results.

Chocolate Peanut Butter “Granola” Bars (Oat and Grain Free)

Chocolate Peanut Butter Granola Bars (Oat-Grain Free)

These might just look like every other granola bar you’ve seen and you might even be wondering why “granola” is in quotes in the title.  That would be because there are no oats or grain in these.  The kick of flavor from all the different nuts, coconut, and of course, chocolate is heavenly in these bars and the grain is not missed at all.

I made these right before my family reunion in June.  When getting out other desserts to share, I snuck one of these out of the fridge for me (since I’m not eating any of the other treats that were available) and my brother, Matt, asked what they were.  He was interested in them since he tries not to eat much sugar and he knew they were probably healthy since I was eating them.

Within minutes, they were almost completely gone.  Matt loved them.  He encouraged others to try them and they liked them as well.  I hurried and snuck a couple more bars to save for me for another time and let them get devoured.  Without oats and other grains, the nutty flavor is intensified and these have just the right amount of chocolate.

Chocolate Peanut Butter “Granola” Bars, adapted by Katrina, Baking and Boys! from Danielle at Against All Grain

1/4 cup (84 grams) raw honey

1/2 cup (148 grams) organic, natural peanut butter

2 tablespoons (28 grams) coconut oil

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup raw almonds

1/2 cup raw walnuts

1/2 cup raw pecans

1/2 cup raw cashews

7 pitted dates, roughly chopped to check for pits

1/4 cup raw sunflower seeds

1/4 cup shredded, unsweetened coconut

1/4 cup Enjoy Life mini chocolate chips

Line an 8x8 inch baking pan with nonstick foil.  Set aside.  In a small saucepan, combine the honey, peanut butter, coconut oil and salt.  Heat until all melted and combined together.  Stir in the vanilla.  In the meantime, put all of the nuts and the dates in a food processor and pulse until mixture resembles course sand.  Add the sunflower seeds and coconut and pulse a few times until they are mixed well with the other nuts.  Remove the peanut butter mixture from the stove and stir the nut mixture into it.  Once it is all combined, pour the mixture into the prepared pan.  Place a piece of parchment or waxed paper on the top and press it down evenly with your hands.  Remove the paper from the top and sprinkle the chocolate chips on top and again using the parchment/waxed paper, press them in to the top of the bars.  Put the pan in the freezer and freeze for 2 hours.  Remove bars from the pan and the foil and cut into desired sized bars on a cutting board.  Store in an airtight container in the fridge for 2 weeks.

It’s official, I am making these again today.  They are full of nuts and pretty sweet, I think the bars could even be cut smaller than I did in the photos.  But at this size, they are a perfect snack or energy bar.

Coconut Mango Ice Cream (Paleo, Dairy Free, Refined Sugar Free)

Coconut Mango Paleo Ice Cream

Does that not look like the most delicious bowl of ice cream?  Yeah, I know, there’s no chocolate.  I live in a world of chocolate and prefer it most often.  But this ice cream is delicious and basically health food.  You’ve got to make this!

I started with a couple mangoes.  Then I added a little raw honey and some lime zest and lime juice.  Mango and lime are a match made in heaven.  Instead of dairy cream, I used a full fat coconut milk.  That’s it.  So easy, fresh, healthy, delicious.  This ice cream is Paleo, dairy free, and void of refined sugars, but you’d never know it isn’t there and you won’t miss it.  I happened to have some toasted unsweetened coconut, so I sprinkled that on the ice cream and drizzled it with a little honey.  Love the texture and flavor it added!

Course, it’s good “plain”, too.  The first photo is right out of the ice cream maker.  The second photo is after it hardened in the freezer.  Both are good!  the mango flavor comes through, the lime is there and you can taste the coconut, even without the toasted coconut on top.

2 mangoes, peeled and cubed

1-14 ounce can of full fat coconut milk

2 tablespoons raw honey ( a little more to taste)

zest of half a lime

juice of 2 limes

*optional topping—toasted coconut and honey

Put all the ingredients in a blender (or a food processor would work, too).  Blend until smooth.  Put the mixture in the bowl of a frozen, prepared ice cream maker and churn according to manufacturer’s instructions.  Serve as soft-serve ice cream with toasted coconut and a drizzle of honey if desired.  Put ice cream in an airtight container in the freezer.

Cranberry Almond Date Balls, Grain Free (Paleo), Refined Sugar Free

Love how simple all the different grain free, refined sugar free treats I’ve been making are, as well as they are often no-bake.   I love that you can often just put together any nuts with dates you want, add any other flavors and end up with so many different tasty treats.

I recently made a couple different kinds for my sister-in-laws’ baby shower.  She requested nothing with chocolate and grain free, as well as no sugar.  I made a couple different versions of these.  Of course, you can probably tell in the photo that these particular ones do have chocolate.  It just seems strange to me to not have chocolate in there, so after taking a couple versions of these with no chocolate to the shower, I made some for myself a couple days later with chocolate. ;  )  There isn’t very much chocolate, but just enough for me.

1 cup almonds (I don’t toast them, but since I store them in the freezer, I put them on a baking sheet in the oven for a few minutes just to take the chill off them)

1 cup dried cranberries (sweetened with apple juice)

1 cup pitted dates (I always cut them in half to check for pits and I always find at least one)

2 tablespoons raw honey

1/2 teaspoon vanilla extract

pinch of salt

2 tablespoons Enjoy Life mini chocolate chips (optional)

2 tablespoons unsweetened shredded coconut (optional)

In the bowl of a food processor, pulse the almonds until they start becoming nicely chopped.  Add the dates and cranberries.  Blend until all ingredients are starting to be well combined.  Add the vanilla, salt and honey.  Pulse until it is all clumping together.  Add the chocolate and/or coconut and pulse a few times.  Form into walnut sized balls, squeezing it together and rolling it in your hands.  Set on waxed paper lined baking sheet/plate.  Store in an airtight container.  Makes about 18, depending on how many bites you snitch while rolling into balls. ;  )

1 cup pecans

1 cup dried cranberries (sweetened with apple juice)

1 cup pitted dates

zest of one lemon

pinch of salt

1-2 tablespoons unsweetened shredded coconut (optional)

Follow the same directions for the above recipe, if it is not all sticking together in well in the food processor, add a little honey until you like the consistency.  I didn’t add honey to this version.  Pecans may have more moisture.    I also rolled about half of these in coconut, which you can do to any of the date balls.

Almond Joy Fudge Bars, Two Ways—Gluten Free or Grain Free, Refined Sugar Free

I’ve been meaning to get these posted because they are SO good.  I’ve made them twice in one week.  The first time I made them with gluten free oats.  As I ate them and loved them, I decided they don’t really even need the oats in them, so they can also easily be made without any oats/grain.

These are really easy to make, the hardest part is waiting while they chill in the fridge for an hour.

1/2 cup (128 grams) almond butter (I use homemade)

1/3 cup (120 grams) raw honey

1/4 cup (56 grams) organic coconut oil

3/4 cup (4 1/2 ounces) refined sugar free chocolate chips (Equal Exchange or Enjoy Life, etc)

1 cup minus 3 tablespoons gluten free oats

3 tablespoons unsweetened coconut flakes (toasted, optional)

1/3 cup almonds, toasted and chopped

Line an 8 inch square baking pan with nonstick foil (or coat with coconut oil).

In a saucepan, heat together over medium heat until all combined the almond butter, honey and coconut oil.  Turn heat off and add the chocolate chips.  Stir until melted.  Stir in the oats, coconut and almonds.  Pour and spread evenly into pan.  Chill in refrigerator for an hour.  Remove bars from pan using foil edges and cut into squares.  Store in refrigerator.

While eating and loving these, I couldn’t help but think they would be really good without the oats (grain) and how kicked up they would be with more coconut and almonds, so I made them again replacing some of the oats with more coconut and almonds.  Delicious!  Can’t decide which I like better.  You decide.  When I made them without the oats, I toasted the coconut.  I’ll probably toast it every time now.

No Bake Cherry Chocolate Chip Crumble Bars and No Bake Cashew Butter Oatmeal Cookies—Secret Recipe Club

Love, love, love these healthy, gluten free, no sugar, No Bake Cherry Chocolate Chip Crumble Bars I made for this month’s Secret Recipe Club.  These were easy to make, required no baking (hence the name ;)) and are tasty as can be, especially if you like cherries and chocolate.  Great combo!

I came up with this recipe after seeing (and taking most of the inspiration from) the No Bake Fruit Crumble Bars on my Secret Recipe Club blog, The Saturday Evening Pot, this blog is written by The Chef and The Lucky Wife—they have Two Well-Fed Kids they love cooking for.  My bars were made with gluten free oats and they just have unsweetened dried cherries, walnuts and a couple other essentials.  Then they are sandwiched with some homemade cherry jam I made that is delicious!  For kicks and because I just can’t seem to leave chocolate out of anything, I added a mere two tablespoons of Enjoy Life mini chocolate chips.  Mmmm!

No Bake Cherry Crumble Bars 9-2-13

No Bake Cherry Chocolate Chip Crumble Bars (Gluten Free, Refined Sugar Free), by Katrina, Baking and Boys!, adapted from The Saturday Evening Pot

2 cups oats (I used gluten free)

1 cup walnuts

1/4 teaspoon salt

1 cup unsweetened dried cherries

2 tablespoons organic coconut oil

2 tablespoons raw honey

2 tablespoons Enjoy Life mini chocolate chips (or any brand you’d like)

1/3 cup (or more) homemade cherry jam**see recipe below

Line an 8 inch square pan with nonstick foil.  Combine the oats, walnuts and salt in a food processor and pulse until crumbly.  Add the cherries and blend until they are well combined with the oat mixture and are small bits of dried cherry.  Add the coconut oil and honey and pulse to combine and mixture just starts to clump together.  Add the chocolate chips and pulse again a few times.  Sprinkle half the crumbly mixture evenly in the bottom of the square pan.  Spread the jam over the crumb layer.  Sprinkle the remaining crumb mixture evenly over the jam and press it down gently.  Cover the pan and refrigerator for an hour.  Remove bars from pan using the overhanging foil.  Cut into squares on a cutting board.  Keep bars in the refrigerator until serving.

**Homemade All Natural Cherry Jam

2 cups cherries, pitted (I used some that I had in the freezer)

2 tablespoons raw honey

1/4 teaspoon almond extract

Put all ingredients in a blender or food processor and pulse until pureed.  Leave it as chunky as you’d like.  Put the mixture in a small saucepan and boil for 15-20 minutes until thickened.  Cool.  Store in an airtight container in the refrigerator.  Use within 2 weeks.

If I only had more dried cherries right now……..

Before I made the crumble bars, I also made the No Bake Cashew Butter Oatmeal Cookies.  Again, I used gluten free oats and unrefined sugar.  I also used coconut oil instead of butter.  The cashew butter I used was homemade.  These are great.  I put most of them in the freezer to share with my mom when my parents come here next week, since she doesn’t eat chocolate and loves cashews, she will like them.  My son, Parker really liked them and I thought they were great.

Ingredients for No Bake Cashew Butter Oatmeal Cookies

I made the brown sugar with some organic natural pure cane sugar and added about 1/2 teaspoon of molasses to it and mixed it together until it was brown sugar.  Love doing this.  I’m still trying not to use too much pure cane sugar even though it is pretty unrefined, but these had quite a bit.  We must “splurge” sometimes, right and I still even consider these bars pretty healthy compared to many other treats.

No Bake Cashew Butter Oatmeal Cookies

3 tablespoons packed light brown sugar (I made it homemade with 3 tablespoons organic pure cane sugar and 1/2 teaspoon molasses mixed)

1/2 cup organic natural pure cane sugar

2 tablespoons organic coconut oil

1/4 cup almond milk (or any milk you’d like)

1/3 cup cashew butter

1/2 teaspoon vanilla extract

1  3/4 cups rolled oats (gluten free)

1/3 cup unsweetened shredded coconut

pinch of salt

In a small saucepan over medium heat, combine the brown sugar, cane sugar, coconut oil, milk and cashew butter.  Whisk together and let come to a boil.  Boil for one minute.  Remove from heat and stir in vanilla, salt, oats and coconut.  Stir with a wooden spoon until well combined.  Drop dough with a cookie scoop onto waxed paper lined baking sheet or plate.  Refrigerate for at least 20 minutes until set.  Store in refrigerator until serving and any left over.

Grain Free Chewy Chocolate Chip Cookies (Refined Sugar Free)

Yesterday I posted the Healthy Fudgy Brownie Bites and mentioned how they are now one of my favorite treats.  On Facebook I also mentioned that besides those I have found some fantastic, perfectly chewy, you'd-never-know-they-were-healthy chocolate chip cookies.  I think I might just keep a running stock of these two things and I’ll be good for a long time—though that wouldn’t be fun to not keep trying new things, would it? ;)

Well, these are definitely great chocolate chip cookies and if you didn’t tell anyone, I think they’d never know they didn’t have flour or refined sugar.  I plan to make them again, maybe even today.  They have some coconut in them, which might add to the chewiness.  I think I’ll try them without the coconut, but with lots of nuts and see if they are still pretty much the same.  These also have no added oil or butter—just almond butter.  Instead of loads of sugar they just have a little honey in them.  I used the Enjoy Life mini chocolate chips, which happen to be soy free, dairy free, refined sugar free and grain free.  You could use any kind that suits your diet needs. 

Once again I found these cookies at Jennifer’s blog, Unrefined Kitchen.  She has so many recipes that I want to try.  SO glad I tried these.  Looking through the recipe, I didn’t really change anything, so the link goes to her recipe.  She mentioned using 1/3 cup of honey and more if you’d like—I only used 1/3 cup and they are perfectly sweet.  She also suggested trying nuts in place of some of the coconut, so that is what I did—1/3 cup of unsweetened coconut and 1/3 cup of pecans.  My next try (today?) will be leaving out the coconut.  I love the coconut, but some people who are taste testers of mine don’t like it.  I baked the cookies about 10 minutes.  My scoop must be a bit bigger than Jennifer’s scoop, as I only got 16 cookies and she said the recipe makes about 20.  I used homemade almond butter.

Grain Free No Bake Coconut Cookies (Paleo, No Refined Sugar)

Grain Free No Bake Coconut Cookies

You know those no bake cookies that every loves?  Yes, the ones with TONS of sugar and an overabundance of butter.  Sometimes they have peanut butter, but always cocoa and oats, maybe coconut and nuts, too.  Yep—those are really good, huh?  You talk yourself in to having too many of them because you tell yourself they are “good for you” because they are full of wholesome oats.  You won’t have to feel guilty anymore if you make these Grain Free No Bake Coconut Cookies.  What I like is that even though I made them grain free because I’m cutting back on grains and not having any gluten right now, you could still add oats and I think I’ll do just that next time I make them.  I’ve got some gluten free oats and these would be perfect with some.  Just cut some of the coconut and use some oats.  Ooh, I might even try that today.  I’m not against all grains even though I’m cutting out gluten and am really enjoying trying different things.

I recently made some Gluten Free Multigrain Bread that I need to share with you soon.  But for today, let’s talk cookies!  I made these for an activity at church with the ladies and I’d have to say they were a big hit.  Everyone was asking if I was the one who made them (they all know I make yummy treats and have a blog).  They were certainly simple to make, especially with no baking involved.  While I have been learning a lot about gluten and grain free treats, I have been finding lots of recipes on the too-numerous-to-count healthy food blogs that are out there.  This is another one I must give all the credit to someone else.  I found these at Jennifer’s blog, Unrefined Kitchen.  I’ve actually made and drooled over a number of recipes on her blog.  Check it out!

Grain Free No Bake Coconut Cookies, by Katrina, Baking and Boys!, adapted from Jennifer at Unrefined Kitchen

1/3 cup raw honey

1  1/2 tablespoons cocoa powder

1/3 cup organic coconut oil  (I might try it with just a little less next time, though they firmed up great in the refrigerator)

1/3 cup almond butter (I used homemade)

1 teaspoon vanilla extract

2 cups unsweetened coconut (finely grated)

In a medium saucepan over medium heat, combine the honey, cocoa and coconut oil.  Bring to a boil and boil for one minute.  Remove from heat and stir in the almond butter and vanilla.  Stir in the coconut.  Scoop onto a wax paper lined baking sheet using a small cookie scoop.  Refrigerate until set (about 30 minutes).  Store in an airtight container in the refrigerator.  They are good both served cold or at room temperature.  Makes about 20.

These are perfect little two-bite sized cookies that were super easy to make.  I’m off to make them again, though I promised the boys homemade pizza tonight and want to make some gluten free pita bread that I can eat.  Pita left flat makes a perfect pizza!  Have a great weekend!
