Want Some Chocolate Cake? That's Crazy!

I think no one likes chocolate cake more than my dad.  He could often be heard saying, "I want some chocolate cake."  But you have to say "chocolate cake" in a way that you can almost taste it and when you hear it, you want to make it yourself.  (Dad, I've found that cake that you've been wanting all along.)  It's homemade and can be made SO fast and SO easy!  And you'll never guess where I've found it--yep, Cookie Madness.  Although it's probably not the most decadent, amazing chocolate cake you've ever had, I know it is what my dad wants when he says, "chocolate cake".  It is so easy!  You don't have to grease the pan and you make the whole cake IN the cake pan.  It takes just a few basic ingredients that we pretty much always have on hand.  It also doesn't have eggs in it--so does that mean it's low fat?   Hmmm.  I guess it IS lower in fat and also saves money.   Here's the recipe called Chocolate Crazy Cake, it has also been called Wacky Cake.  What I like about this cake is that it was so quick to make (as I did for a last minute dessert when we had company coming).  This could also be something easy and fun for the kids to help make.

I found these cute patriotic marshmallows recently and used those to quickly decorate the cake.  Although the frosting recipe on Anna's link is great, I'm sure, I made a quick frosting.  When I do that, I don't really measure the ingredients.  I probably used about 2 cups powdered sugar, 1/4 cup cocoa, 4 T. butter, 1/2 t. vanilla, pinch of salt and 1-2 T. milk.  Whipped that up and spread it on the cake, after it cooled.  The cake is moist and chocolatey.  We don't really eat cake much at our house, because for one, Kevin does not like cake and especially frosting.  But even he ate a big piece and said it was pretty good for being cake.  This was a perfect made-from-scratch, quick go-to cake.

Yum!!! My mother in law makes this cake almost every Sunday for Dinner. It is really good and easy. Love the choclate covered Sammy.
