TWD—Cornmeal and Fruit Mini Muffins

For Tuesdays With Dorie this week, Caitlin at Engineer Baker chose the Cornmeal and Fruit Loaf on page 43 of Baking From My Home to Yours.  Caitlin will have the recipe on her blog.  Kind of last minute, I decided to cut the recipe in half and make mini muffins.  So instead of making a loaf, I made mini muffins, other than that, I followed the recipe exactly.  Well, I suppose I sprinkled some sliced almonds on top of each muffin.  But I used an apple and some dried apples as suggested.

The muffins were just okay.  Kind of a bummer.  I wish I would have added more cinnamon and some walnuts inside or something.  They were also a little dry.  Maybe I baked them a couple minutes too long.  Oh well.  You can’t win them all.  Stay tuned, coming up next I’ll share some Root Beer Cupcakes I made that were REALLY good!

I do want to check out other Cornmeal and Fruit Loaves that others made over at Tuesdays With Dorie and see how they faired.

These look good, love the almonds on top. I didn't make. I wonder how long before I am declared legally dead at TWD. I better come up with something soon. School all going well for the kiddos? Empty Nest is very weird, I'm sure I'll get used to it eventually but I'm not there yet.

Sorry they weren't what you wanted:) I think they look wonderful! This loaf is not sweet at all...thats why I loaded it up with sugary jam!

Cute mini muffins! I used sliced almonds in mine as well, along with nectarines, and I really enjoyed this one. Wish they would've been a hit for you and the boys!

They look really delicious! I would definitely add more cinnamon...I'm a sucker for warm spices :)

They look good, but it's too bad they are dry. I think I baked mine a couple of minutes too long yet it was still moist.

my rule of thumb: always add almost double the amount of cinnamon. i always ramp it up at least to heaping amounts because to me, there's never enough cinnamon. I think this loaf would have benefited from a few other spices but that's just me. i'm sorry this was just 'meh' to you but no worries, there aren't very many of those in this book are there ;) they look lovely with the sliced almonds on top!

They look so cute with those flower papers and the almonds on top. Too bad you didn't think they were as tasty as they look.

They certainly look so very pretty. I hate when things dont turn out perfectly. But it makes me appreciate the ones that do all the more:)
