TWD—Basic Marbled Loaf Cake (Cupcakes)

Our recipe today for Tuesdays With Dorie was the Basic Marbled Loaf Cake (page 230-231) in Baking From My Home to Yours.  I halved the recipe and made eight cupcakes.

The marbling doesn’t look too bad on the tops of the muffins, but once cut open, it isn’t that great.  I found it hard to do because the half of the batter with the added melted chocolate was sure thick.  So though the marbling isn’t the best, the cupcakes were still good.  They were dense and moist.  Dorie gave many suggestions for playing around with this cake, but I went with the basic chocolate/vanilla swirl.  I did make a few slight changes.

For the half recipe, it called for 3/4 cup butter.  I used 1/2 cup Bestlife butter and 1/4 cup nonfat Greek yogurt.   I used 2% milk instead of whole milk.  And I didn’t half the vanilla extract.  The recipe is easy and would be fun sometime to play around more and try other flavors.  Once the cupcakes had baked and cooled, I sliced one open to see that I was right—not the greatest marbling.

These look like dense little cupcakes, very sturdy to pile on some frosting! Yum!

So funny -- when I first saw the cupcakes, I thought something was amiss "Katrina making cupcakes without some kind of frosting?" Then I scrolled down and my faith was restored. Ha! This looks like a fun recipe.

Frosting is never a bad thing, in my opinion anyway. PB and Nutella were very good choices!

Mmmh, peanut butter frosting - great idea! I guess it is just hard to get a good marbeling into small "cakes"

Thanks for the idea! I can put some Nutella on my cupcakes for my husband, who is in need of frosting! Great job lightening them too - as I was putting the butter in the bowl, I was thinking that I should have subbed some yogurt.

I wonder if they didn't swirl as well in cupcakes instead of as a cake? Regardless, I think they look fantastic and I'd definitely eat them!
