Flourless White Chocolate Peanut Butter Cookies

Flourless White Chocolate Peanut Butter Cookies 4-28-11

I recently found Peanut Butter & Co.'s White Chocolate Wonderful Peanut Butter in one of our grocery stores.  I have tried a number of their delicious peanut butters.  After hearing recently many people rant and rave about this one, I started looking for it.  As soon as I found it, I snatched up a jar.  The peanut butter is really good.  It is all natural, but quite sweet.  I am happy just having a spoonful here and there and savoring it.  But I decided to see if there were any recipes made with the white chocolate peanut butter online. 

I was led to Lauren’s blog, Healthy Food For Living for some Flourless White Chocolate Peanut Butter Cookies.  These are a great showcase of the White Chocolate Wonderful Peanut Butter and the added white chocolate chunks really kick them up a notch!  I only every so slightly adapted Lauren’s recipe.  You can find her recipe on the link to her blog.  Here’s the recipe I made.

Flourless White Chocolate Peanut Butter Cookies, by Katrina, Baking and Boys!

1/2 cup Peanut Butter & Co.’s White Chocolate Wonderful Peanut Butter

2 tablespoons brown sugar

1 egg white, lightly beaten

1/2 teaspoon baking soda

1/4 teaspoon vanilla extract

3 ounces white chocolate, chopped (I used Lindt white chocolate bar)

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.

Combine in a medium sized bowl the peanut butter, brown sugar, egg white, baking soda and vanilla.  Stir together well.  This can all be done with a wooden spoon.

Fold in the chopped white chocolate.  Scoop tablespoon-sized balls of dough onto the baking sheet.  Bake for 10 minutes, until lightly browned.  Let cool for 5 minutes on baking sheet, then remove to a cooling rack to cool completely.  Makes about 18.

These cookies are perfectly crisp and chewy and have great peanut butter flavor with just the right added sweetness from the white chocolate.

I haven't really played around with white chocolate too much, this cookie looks delicious with it. Wish I had some. Veryy wrong choice to browse blogs when hungry!

I love their peanut butter, but our grocery store stopped selling it. The White Chocolate flavor was my favorite.
