TWD—Cornmeal Shortbread Cookies

The recipe for Tuesdays With Dorie today was chosen by Valerie from une Gamine dans la Cuisine.  She has written up a great post (and posted some fantastic photos) for these cookies—she also has the recipe.  Check it out because she said everything I was thinking of writing about the cookies!  I made them a couple weeks ago.  Love them.

DSCF4681 These have a nice little crunch from the cornmeal and since they are shortbread they have a buttery tenderness.  The lemon zest kicked them up a notch, too.  A crunchy cookie with lots of butter that is pretty much only liked by me at our house is dangerous.  I’m glad I gave most of them away! ;)

Hmm. Cornmeal. So...are they like the cookie version of cornbread? They look good :)

Katrina, These look great. As much as I love cornmeal in baked goods, I know I would love these. I'll have to give them a try.

How cute is that box?? It reminds me of the box the local donut chain uses for donut holes (though their boxes aren't nearly as pretty) - yum :)

Shortbread is hard to improve on, but the conrmeal certainly is one way you can try. These look delicious. I love the flavor of cornmeal.
