TWD—Fluff-Filled Chocolate Madeleines

Fluff-Filled Chocolate Madeleines were chosen for TWD this week by Margot from Effort to Deliciousness.

I’ve never made madeleines.  Have always thought they are pretty.  Decided to finally buy a pan.  It came a good week ago.  I just made the cookies Monday afternoon.

I have decided that I wish Dorie’s recipes would tell how many cookies a recipe should make.  Seems like I’ve wondered before on some other recipes in the book, Baking From My Home to Yours.  I also didn’t know with madeleines how much cookie dough/batter should go in each little mold.  So I used all the dough for 12, since the recipe says one pan.

I think the molds were a little overfilled.  I think the recipe would make 16-18 cookies better than 12.  The cookies took 21 minutes until I decided they were done.  They came right out of the pan, which I did butter and flour well.  The cookies seem huge.

I followed the recipe exactly.  So these are fluff-filled, but you can’t really tell.  I tried to show the inside, but never did get a good picture of it.  But I will say this—these are mighty tasty.  They definitely need the ganache for that added kick. I think I would rather have them filled with ganache and dipped in it.  I drizzled a fun little S on the ganache with some melted white chocolate.

TWD-Chocolate Fluff Filled Madelines 1-10-11You can get the recipe for these on Margot’s blog.  Check out the other TWD bakers' madeleines, too.

I am so with you on this -- ganache filled and coated over marshmallow fluff any day! The cookies sound really tempting that way.....

How pretty! I have always wanted to try making them, but have never committed to getting the pan! Yours sound delightful!

These look so professional, Katrina! I agree, ganache inside and out would make these even yummier.

This is your first time??? OMW, I am a veteran Mad baker and believe me, mine do not show that at all. Yours look perfect. I'm not coming back here anymore. (Just kidding.)

Gorgeous cookies! I love that drizzle of delicate white chocolate. :)
My cookies were all different sizes, I couldn't figure out how to add the batter to the pan either.

They're absolutely perfect - not too big at all! :)

I used a mini-muffin pan and got 16 so you may be on to something. I also thought the ganache was definitely a requirement. Cute S.

Agree....it would have been better with 16 rather than 12 over-filled ones....I love the squiggle of white chocolate.

I've made madeleines a few times, and I'm still never clear on how much batter to put in each mold! My madeleines turned out huge with this recipe too. Yours look terrific though - love the white chocolate!

Your madeleines look lovely. Great job for your first time. Must be heavenly to bite into all that fluff filling, though I certainly wouldn't pass on a ganache filled one either.

Your madeleines look fantastic! I got twelve, too, and they seemed enormous. I agree that the ganache totally made these. Thanks for baking with me this week!

I used the batter all up also but I think, I could have gotten another two out of this batter.

Yours came out looking neat and lovely.

I've always wanted a madeleine pan, they're so dainty :) Fluff and chocolate are such a wonderful Americanisation of the French classic!

Love these. Bet they are yummy. I've never made Madeleines because I don't have a pan. They're my sister's fave cookie.
