Corn Flake Cookies with Hershey's Milk Chocolate Crisp Bits

I recently found this new Hershey's Chocolate Bar (pardon the blurry picture!).  Of course, I had to buy a few bars and come up with a great way to use them.  You can't see the fine print, but it says Crisp Corn Bits.  Interesting.  Well, I thought it kind of just tasted like a Crunch bar or something like that.   It's pretty good.


Crisp corn bits and in the picture on the bar, it looks like little bits of corn flakes.  I'd seen corn flake cookies before and searched to find the one I thought would be good with a little chocolate.  I decided on this one I'd found on Anna's Cookie Madness blog.  She's actually got quite a few cookies with corn flakes in them and it was hard for me to decide, but I chose this one and REALLY like it.  I loved the addition of the Hershey's Bar.


Corn Flake Cookies with Hershey's Milk Chocolate Crisp Bits Bar, adapted from

1 cup crushed corn flakes

1/2 cup chopped nuts (walnuts/pecans--I seriously can't remember which I used-pecans?)

1/2 cup coconut

2 sticks unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar

1 large egg

1 cup canola oil

1 teaspoon vanilla

3  1/2 cups all purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup old fashioned oats

9 oz. (2 bars) Hershey's Milk Chocolate Crisp Bits, chopped

Preheat oven to 350 degrees.  Spread corn flakes, nuts and coconut on a baking sheet and toast for 8 minutes.  Set aside to cool. 

Lower oven to 325 degrees.  Cream butter and both sugars, then beat in egg and vanilla.  Mix to combine oil. 

Combine flour, baking soda and salt.  Mix in to creamed mixture.  Stir together oats, corn flakes,  nuts and coconut.  Stir in to dough mixture. 

Drop by rounded spoonfuls onto parchment paper lined baking sheets.  Bake for 10 minutes.  Cool on wire racks.  Makes about 48 cookies.


These are great with a crunchy, almost flakiness and lots of flavors.   You could use any chocolate  or leave it out.  They froze well, too. 


And a quickie fudge recipe that I also made recently.

Easy Fudge!

1 pkg. chocolate chips (any kind--I used Hershey's Milk Chocolate)

1 cup butterscotch chips (or any other flavor)

1 can sweetened condensed milk (I always buy fat free)

1 teaspoon vanilla

1/2 cup toffee bits

1/2 cup walnuts, toasted and chopped

Melt in medium sized saucepan over medium heat.  When melted, begin adding the milk slowly and stir until combined and smooth.  Remove from heat, add vanilla and mix-ins.  (You can add any mix-ins you want!)  Spread evenly in a 9x9 inch cake pan that is lined with foil and lightly sprayed with cooking spray.  Cool or refrigerate until set.  Remove from pan with edges of foil.  Cut to desired sized pieces.

There were cornflakes in those cookies? I never would have guessed. They were so good. I almost ate them all but not before I let Jon have some.

I have seen that bar on another blog I think. Corn flakes and chocolate are great together, but if you add it to cookies, yummy!
