TWD--I Think They Should Be Called Jam Pufflets or Something Like That (We don't say that other two words in the title around our house, although I love it!)

Today's Tuesday's With Dorie recipe was chosen by Jacque (What a talent she is!) of Daisy Lane Cakes.  The recipe from Dorie Greenspan's Baking From My Home To Yours used a(nother) flaky pastry dough (similar to last week).  This dough was very wet and many complained that it was hard to work with, especially as it became room temperature quickly after it had been chilled.  I just used lots of flour on the counter and didn't have any sticking problems.  I worked quickly and made sure I had everything else I needed ready to go.  Although it's wooden and not marble like some, I also threw my rolling pin in the freezer for a couple hours.  I think it helped.

I made half the recipe.  I cut circles not squares.  And then as Kevin put it, "you just can't follow a recipe exactly, can you?"--I came up with lots of fun things to put inside.  The recipe only suggested jam.  I did some with jam.  Raspberry.  They're good.

That would have been a lot of raspberry pufflets had I done them all that way.

So I didn't.  I made a couple with some chopped Reese's Peanut Butter Cup.  Yep, that's right.

I had fun looking in the cupboard for things that would be fun and yummy.  I made some with mini chocolate chips, coconut, and almonds.  They were "joy"ous!

I made a couple as Smore's.  That's right.  Marshmallow Creme, chocolate and graham cracker crumbs.

A few of them I added the raspberry jam and threw in some pecans, too.  I know, I'm nuts!  But they're good ;)  Also made one with just some chocolate chips.

There was still all the scrap dough left.  I balled it up and wrapped it back up and put it in the fridge to chill again.  Then I didn't feel like rolling, cutting, filling, pinching together, and venting anymore, so I made a pufflet galette.  After rolling the dough out thin, I used the rest of the raspberry jam I had out and spread that on the bottom, then I sprinkled the remaining coconut over that.  Followed by some chopped pecans and almonds and the mini chocolate chips.  THIS, my friends, is delicious!  A wonderful combination of flavors!  Perfect because I didn't have to put such a small dab of filling on it, I didn't have to pinch anything or vent it with holes.  I brushed some milk on the dough then sprinkled it with sugar.

Crusty, flaky things are dangerous for me.  I like them.  I eat too much.  I should have quartered the recipe.

Holy Cow, Katrina! I don't know how you get all of these variations done. Impressive. That galette looks divine, though!! I didn't get to bake this week...sheer laziness. Great job!

They all look awesome! I have to try the raspberry variety before I forget! I think halving or quartering the recipe would be a good idea for me too, otherwise I'll have to buy bigger pants.

How cool that you tried all of the different things in the middle. Chopped reeses has to be my favorite. I was thinking about what I could put in mine also since hubs doesn't really like jam. Maybe when I get to make these I will try that too! Who needs to completely follow directions when you get such great results!

Peanut butter cup!?! Oh man, wish I had thought of that. I did blackberry jam with Nutella and toasted chopped hazelnuts, and that was yummy. Yours look divine! :)

I am always in awe of your creativity when I visit over here...you have the best and most creative ideas always. PB & J in one is absolutely inspired, as are the rest, and they look so perfect. I may have to revisit these again even though I didn't think I was going to...and make them a little larger! The galette was truly inspired and absolutely gorgeous. I think you win this week.

Your Pufflets Whose Name Must Not Be Spoken look incredible -- ALL of the varieties (and we can always count on you to give us variety!) I laughed and laughed at the title of your post - yeah, cottage cheese anything just really doesn't sound appetizing. But this pastry was delicious - I agree with you!

Pufflet Galette? That's what I'm doing with the remaining dough in my fridge. Just couldn't muster the energy to make more miniatures but I can do the big one. Thanks for the idea

That galette is a great way to deal with this dough! The flavors you came up with all sound great but the final one (in the galette) is truly inspired.
