Branching Out--Baked Citrus Herb Salmon

I don't just bake goodies.  Who knew?  Sometimes I make dinner and such. 

I don't like seafood.  I've tried.  Funny thing is, I LOVE halibut.  That has been pretty much the only fish or seafood I will eat and have even been known to order it at restaurants and be craving it.  I know, it's not a very "fishy" fish.  That's beside the point.  Something recently (not even sure what), made me want to give salmon another try.  I ordered it a few months ago on a sandwich.  It was really good.  A bit fishier, but good.  I was so proud of myself for eating a fish that wasn't halibut!  After that I bought frozen salmon fillets and stuck them in the freezer and forgot about them.   I watch a bit (okay, maybe it's more than a bit!) of the Food Network and with the New Year  they are doing a lot of healthy recipes and episodes.  I have seen a lot of salmon recently.  I've also seen plenty in blogland.  So I got out the salmon and decided to make this---

I didn't take pictures of this.  It was a little salty, but even the boys tried it and wanted more salmon!  Go check out Kalyn's awesome healthy blog for some great recipes!  Again, the salmon didn't seem to fishy, which I've always thought it to be.

I bought more salmon.  Made this---(not the greatest picture!) Baked Citrus Herb Salmon

I found this recipe at Recipe4Living.  The recipe called for fresh herbs, but I used dried.  You can get the recipe on the link above, but here it is as I made it.

Baked Citrus Herb Salmon

6-8 salmon fillets (about 2 oz. each), these were frozen/thawed

1 teaspoon sea salt

1/2 teaspoon ground black pepper

2 tablespoon (roughly) grated lemon rind

1 tablespoon grated orange zest (I used a clementine)

dried chives

dried thyme

dried oregano

dried tarragon (I didn't have any)

lemon slices

Preheat oven to 450 degrees.  Line baking sheet or shallow oven-safe pan with foil.  Spray lightly with cooking spray. Set fillets on foil.  Salt and pepper the fish fillets.  Sprinkle the lemon and orange zest over the fish.  Sprinkle spices to desired amount .  Add lemon slice to top of each fillet.  Cover with foil and seal edges.  Bake 15 minutes and check for desired doneness. (These fillets were pretty thin.)

The boys (meaning Scott and Parker) each had one fillet.  Taylor actually tasted it!  How cool is that?!  I am now all salmon-ed out for a bit.

Mom-I took a cooking class (it's really an instructor demo-ing the food and the students eating it all) tonight at our local health food's store about warming winter soups.  Goodness, that lady made four delicious soups, and get this, all four of them had onions!  Dad, I'll send you the recipe for one of the soups that was SO good for you to make for mom--a creamy mushroom, chicken, wild rice soup.  It was my favorite.   So, yep, branching out--I ate onions!  (Not enjoying my breath right now, but aren't you proud!?)

I think this is a cute picture of big brother and little brother.  Scott LOVES Sam--most of the time!  He really gets annoyed when he's playing the Wii and Sam just comes right up and turns the tv off or messes up the picture!  ; )

Great job on branching out - both eating fish and posting non-sweets!! My girls didn't used to like fish, and they both started with salmon. They would get "salmoned-out" also! Halibut is my very favorite fish but there are other mild white fish types. Flounder, cod, lemon cod, sole. Citrus and tomato preparations will help cut the fishy-ness, imo. This salmon looks yummy!

I never liked seafood either until I was about 20 and my friend made my try sushi. At first I didn't like it but it slowly grew on me. Eventually I was able to eat a plate of fish and now I love it but I don't make it often enough. This one looks real simple, I think I would use dried herbs as well - they're going to get dried out anyways when you bake it so what's the point =)?

I enjoy fish and citrus always helps punch up the flavor a bit. I will have to try this one! Your boys are super cute!

That's a cute picture!
I LOVE salmon, I think I have almost everyweek. I usually just do it in a non-stick pan without any fat with a bit of salt and herbs de provence. This way must be delicious too, and if you have leftovers they're great to use cold in a salad!

Salmon is one of our "treat" meals. I'm glad you tried it and liked it and even happier that you blogged about it! We grill throughout the year, and that's our favorite way to prepare it.

Salmon should not taste fishy if it is fresh. Wild-caught salmon is much better than farm-raised, healthier too. I have some good salmon recipes on my blog, especially one with caramelized onions and figs -- super good. But halibut is actually my top fave -- can't afford it though most of the time.
