Our recipe today for Tuesdays With Dorie was the Basic Marbled Loaf Cake (page 230-231) in Baking From My Home to Yours. I halved the recipe and made eight cupcakes.
The marbling doesn’t look too bad on the tops of the muffins, but once cut open, it isn’t that great. I found it hard to do because the half of the batter with the added melted chocolate was sure thick. So though the marbling isn’t the best, the cupcakes were still good. They were dense and moist. Dorie gave many suggestions for playing around with this cake, but I went with the basic chocolate/vanilla swirl. I did make a few slight changes.
For the half recipe, it called for 3/4 cup butter. I used 1/2 cup Bestlife butter and 1/4 cup nonfat Greek yogurt. I used 2% milk instead of whole milk. And I didn’t half the vanilla extract. The recipe is easy and would be fun sometime to play around more and try other flavors. Once the cupcakes had baked and cooled, I sliced one open to see that I was right—not the greatest marbling.
I know the loaf cake isn’t frosted or anything, but we thought these needed a little something.

I love the twist you added to this recipe with the Nutella topping.
ReplyDeleteThese look like dense little cupcakes, very sturdy to pile on some frosting! Yum!
ReplyDeleteI am deciding which Dorie recipe i want to make next.....
So funny -- when I first saw the cupcakes, I thought something was amiss "Katrina making cupcakes without some kind of frosting?" Then I scrolled down and my faith was restored. Ha! This looks like a fun recipe.
ReplyDeleteNutella just makes the perfect topping!
ReplyDeleteNutella...you're a genius! :D
ReplyDeleteI think your muffins look perfect, they were not the easiest things to swirl.
I think they look very moist and perfect topped with something.
ReplyDeleteI LOVE NUTELLA and am always looking for new ways to use it!! Thanks for the tip :)
ReplyDeleteNOM. These look amazing... especially with those 'frostings'. :) Beautiful job, Katrina!
ReplyDeleteFrosting is never a bad thing, in my opinion anyway. PB and Nutella were very good choices!
ReplyDeleteI like your variations. Cupcakes are just fun and easy to share.
ReplyDeleteI love your twists on the recipe - and nutella on top? Yum!
ReplyDeleteOMG, frosted with Nutella? I'd love that since I am such a chocolate hazelnut freak. I love the cupcakes.
ReplyDeleteI love what you did with these! Beautiful job!
ReplyDeleteMmmh, peanut butter frosting - great idea! I guess it is just hard to get a good marbeling into small "cakes"
ReplyDeleteMarbled cuppys. Perfect!! So much easier to deal with too.
ReplyDeleteThanks for the idea! I can put some Nutella on my cupcakes for my husband, who is in need of frosting! Great job lightening them too - as I was putting the butter in the bowl, I was thinking that I should have subbed some yogurt.
ReplyDeleteI think the marbling looks pretty terrific in your cupcakes! With the Nutella on top they would be the perfect little treat :)
ReplyDeleteI topped the shortbread cookies from last week with Nutella. Really good stuff. Thanks for baking with me this week. --- Carol
ReplyDeleteThose cupcakes look great! I've tried this as a loaf cake, but I think I want to try the cupcakes now. :)
ReplyDeleteI wonder if they didn't swirl as well in cupcakes instead of as a cake? Regardless, I think they look fantastic and I'd definitely eat them!
ReplyDeleteEverythings better with Nutella! I love the muffins!
ReplyDeleteYUM! I LOVE the frosting addition! Looks divine!
ReplyDeleteYou can never go wrong by adding frosting. ;)
ReplyDeleteCupcakes...what a great idea! Very fun...and choice of frosting goodness, even better. You always have such great ideas over here.
ReplyDeleteYum yum, these looks superb. Thanks for sharing.
